Hearty Seaweed Soup with Dried Shrimp and Chicken Breast Recipe

Soup Ingredients- 1 bowl cooked and shredded chicken breast
- 1 bowl rehydrated seaweed
- 2 Tbsp prepared dried shrimp
- 1.5 Tbsp sesame oil
- 7 cups water (approx. 1.4 liters)
- 2.5 Tbsp soy sauce for soup (Guk-ganjang)
- 1.5 Tbsp oyster sauce
- 0.5 tsp salt (adjust to taste)
Cooking Instructions
Step 1
First, soak the dried seaweed in cold water for about 15-20 minutes until rehydrated. Once softened, squeeze out excess water and cut into bite-sized pieces.
Step 2
Prepare the chicken breast by pre-cooking and shredding it, or use pre-cooked chicken breast. Shred it along the grain into bite-sized pieces.
Step 3
Now, heat a pot over medium heat and add 1.5 tablespoons of sesame oil. Add the rehydrated seaweed and sauté for about 2-3 minutes until fragrant and slightly softened. This step helps to bring out the rich flavor of the seaweed.
Step 4
Once the seaweed is sautéed, add the shredded chicken breast.

Next, add the prepared dried shrimp (2 tablespoons). The savory essence of the dried shrimp will further deepen the soup’s flavor.

Now, pour in 7 cups of water. Ensure there is enough water to generously cover all the ingredients.

Once the soup comes to a rolling boil, add 2.5 tablespoons of soy sauce for soup, 1.5 tablespoons of oyster sauce, and about 0.5 teaspoon of salt to taste. Oyster sauce will add an extra layer of umami.
Step 8
Reduce the heat to low, cover the pot, and simmer for at least 10 minutes. This allows all the flavors from the ingredients to meld beautifully into the broth. The longer it simmers, the deeper the flavor will become. If the soup reduces too much, you can add a little more water.
