Ssamjang (Spicy Soybean Paste)
  • 2 Tbsp doenjang (soybean paste)
  • 1 Tbsp gochujang (chili paste)
  • 1 Tbsp gochugaru (chili powder)
  • 1 Tbsp minced garlic
  • 1 tsp toasted sesame seeds
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking wine (mirin or similar)
  • A pinch of black pepper

Cooking Instructions

Step 1

Begin by thoroughly washing 4 cabbage leaves. Place them in a steamer basket over boiling water and steam for approximately 8 minutes until they become tender and pliable. Be careful not to overcook them, as they should still hold their shape. Once steamed, remove from the heat and let them cool slightly.

Step 2

Next, prepare the flavorful ssamjang for your cabbage rolls. In a bowl, combine 2 Tbsp doenjang, 1 Tbsp gochujang, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 1 tsp toasted sesame seeds, 1 Tbsp sesame oil, 1 Tbsp cooking wine, and a pinch of black pepper. Mix everything together until well combined. You can adjust the amount of gochujang to your preference for spiciness.

Step 3

To prepare the rice base, take 1 bowl of warm barley rice and drizzle 1 Tbsp of sesame oil over it. Gently mix the rice with a spatula to coat it evenly with the sesame oil. Then, using your hands, form the rice into compact, round portions, roughly the size of a small ball. Avoid packing the rice too tightly, as this will make it easier to wrap with the cabbage.

Step 4

Take the steamed and slightly cooled cabbage leaves. Place a portion of the shaped rice onto each cabbage leaf, near one edge. Carefully roll the cabbage leaf around the rice, tucking in the sides as you go, similar to making a sushi roll. If the cabbage leaves are very large, you can cut them into more manageable sizes before rolling.

Step 5

Arrange the rolled cabbage wraps upright on a serving plate. Generously spoon the prepared ssamjang mixture on top of each cabbage roll. The savory and spicy ssamjang will perfectly complement the mild cabbage and rice.

Step 6

Finally, garnish the cabbage rolls with a small cluster of fresh sprouts. This adds a touch of freshness and visual appeal to the dish. Your delicious and healthy cabbage rolls are now ready to be enjoyed!
