Ingredients- Fresh Abalone (with guts) 2-3 pieces
- Sesame Oil 2-3 Tbsp
- Sweet Rice Flour (or Rice) 1 cup (approx. 150g)
Seasoning- Soy Sauce 2 Tbsp
- Salt 1 tsp (adjust to taste)
- Toasted Sesame Seeds 1 Tbsp (for garnish)

Cooking Instructions
Step 1
Soak the Rice: Rinse the sweet rice or regular rice thoroughly and soak it in cold water for at least 1 hour. The longer you soak the rice, the smoother and more delicious the porridge will be. Drain the soaked rice in a sieve.
Step 2
Sauté Abalone Innards: Carefully clean the abalone, separating the meat and the guts. Place the abalone guts in a pot with sesame oil and sauté over low heat until fragrant. It’s important to sauté the guts sufficiently to remove any fishy smell.
Step 3
Mash the Innards: While sautéing, mash the abalone guts with a spatula until they are well broken down. Mashing them finely will help them integrate better with the sesame oil.
Step 4
Sauté Abalone Meat: Once the guts are smoothly sautéed, add the abalone meat to the pot and stir-fry them together. Sautéing the abalone meat in sesame oil also reduces any fishy taste and enhances its savory flavor. Cook until the abalone meat is slightly cooked through.
Step 5
Season with Soy Sauce: Lightly drizzle 2 tablespoons of soy sauce over the sautéing abalone and stir well. The soy sauce will give the porridge a richer color and deeper flavor. Be careful not to add too much, as it can make the porridge too salty.

Stir Constantly to Prevent Sticking: After adding the soy sauce, it’s crucial to stir continuously to prevent the mixture from sticking to the bottom of the pot. Keep stirring to ensure the ingredients cook evenly.

Add Rice and Water: Once the sautéed ingredients and soy sauce are well combined, add the soaked rice and stir-fry briefly until the rice grains turn slightly translucent. Then, pour in enough water (or rice water) to generously cover the rice. Using rice water will result in a creamier and more flavorful porridge.

Simmer and Adjust Seasoning: Bring the porridge to a boil over high heat, then reduce to low heat and simmer gently. Stir frequently to prevent the rice from sticking to the bottom as it cooks and thickens. If the porridge becomes too thick, add more water gradually until you reach your desired consistency. Taste and add salt if needed for seasoning. (I added water about 3 times during cooking).
