Main Ingredients
- Beef (shabu-shabu style), 12 slices (thinly sliced)
- Perilla leaves (깻잎), 6 leaves
- Chives (부추), 1/2 bunch (approx. 30g)
- King oyster mushrooms (팽이버섯), 1/2 bunch (approx. 30g)
Beef Seasoning & Coating
- All-purpose flour, a little (for coating the beef before frying)
- All-purpose flour, a little (for thickening the sauce at the end, optional)
Savory & Sweet Sauce
- Soy sauce, 2 Tbsp
- Sugar, 1 Tbsp
- Cooking wine or Mirin (ginger wine), 1 Tbsp
- Water, 1 Tbsp
- Black pepper, a pinch
- All-purpose flour, a little (for coating the beef before frying)
- All-purpose flour, a little (for thickening the sauce at the end, optional)

- Sugar, 1 Tbsp
- Cooking wine or Mirin (ginger wine), 1 Tbsp

Cooking Instructions
Step 1
First, gently pat the beef slices with paper towels to remove excess blood. Wash the chives and cut them into lengths of about 5-7 cm. Trim the base of the king oyster mushrooms and rinse them lightly under running water. Wash the perilla leaves, pat them dry, and then cut each leaf in half horizontally for easier placement on the beef.
Step 2
Prepare the sauce that will add a rich flavor to your beef rolls. In a small bowl, combine 2 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp cooking wine (or mirin), 1 Tbsp water, and a pinch of black pepper. Stir well until the sugar is dissolved.
Step 3
Now, let’s start making the beef rolls! Lay one slice of shabu-shabu beef flat on your work surface. Lightly coat both sides with a thin layer of flour. (The flour helps the sauce adhere better and improves texture.) Place half a perilla leaf on top of the beef, followed by a portion of the prepared chives and king oyster mushrooms. Starting from the bottom edge, roll the ingredients tightly to form a neat roll.
Step 4
Heat a lightly oiled pan over medium-low heat. Place the rolled beef rolls seam-side down in the pan and cook slowly. Rotate them gently to ensure they are evenly browned all around. This helps to seal the rolls so they don’t unravel during cooking.
Step 5
Once the surfaces of the beef rolls are golden brown, brush them generously with the prepared sauce. Reduce the heat to low to prevent the sauce from burning. Flip the rolls occasionally to coat them evenly with the sauce. They should develop a beautiful glaze and an appetizing color.
Step 6
Continue cooking over low heat until the sauce has reduced and the beef and vegetables have absorbed the delicious flavors. Cook for another 1-2 minutes to ensure the sauce is fully cooked and the inside of the beef is heated through. Remove from heat, slice into bite-sized pieces, and serve warm. If desired, you can mix a little flour with water to create a slightly thicker sauce consistency and brush it on during the final cooking stage for extra richness.
