  • 2 pieces chicken breast (approx. 200g)
  • A little carrot
  • 3 stalks chives
  • 10cm green onion (white part)
  • 1/3 Tbsp salt (or to taste)
  • Pinch of black pepper

  • 1 Tbsp sesame seeds (ground)
  • 1 Tbsp cooking wine (like mirin)
  • 5 cups water (approx. 1000ml)
  • 3 cloves garlic
  • 1/2 green onion (including green part)

First, let’s remove any gamey smell from the chicken breast. Place the 2 pieces of chicken breast in a bowl and add 1 Tbsp of cooking wine. Mix well and let it marinate for about 10 minutes. This step ensures a cleaner, more pleasant flavor in your porridge.

Now, let’s prepare the vegetables that will add color and texture. Finely dice the carrot. Wash the chives and the 10cm white part of the green onion, then chop them into small pieces. The chives will be added towards the end for a fresh aroma.

It’s time to cook the chicken and make the broth. In a pot, combine the marinated chicken breast, 3 cloves of garlic, and the 1/2 green onion. Add about 5 cups (approx. 1000ml) of water, enough to cover the chicken. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 15-20 minutes, or until the chicken breast is fully cooked.

Carefully remove the cooked chicken breast from the pot and let it cool slightly. It’s best to shred the chicken when it’s warm but not scalding hot, so it doesn’t fall apart. Once cool enough to handle, shred the chicken into fine pieces along the grain. Discard the garlic cloves and the large piece of green onion used for broth.

Now, let’s achieve the perfect porridge consistency. Add 1 serving of cooked rice and the diced carrots to the chicken broth. Cook over medium-low heat, stirring occasionally, until the rice breaks down and the porridge thickens. Stirring frequently is key to prevent the rice from clumping.

Once the rice has softened and the porridge has reached your desired thickness, add the shredded chicken breast and simmer for a few more minutes. Allow the chicken to heat through. Then, stir in the chopped chives and green onions and cook for just another minute or so. Be careful not to overcook the vegetables, as they can become mushy.
