Nutritious and Tender Eggplant and Tofu Simmer
A Healthy Combination of Two Ingredients: ‘Eggplant and Tofu Simmer’

Essential Ingredients- 1 eggplant
- 1 block of tofu (approx. 500g)
- 20cm piece of green onion
- 1/4 onion
- Pinch of salt (for seasoning tofu)
- Pinch of black pepper (for seasoning tofu)
Seasoning Ingredients- 3 Tbsp soy sauce (approx. 40g)
- 1 Tbsp cooking wine (mirin or cheongju) (approx. 12g)
- 1 Tbsp sugar (approx. 8g)
- 1 Tbsp red pepper flakes (gochugaru) (approx. 5g, adjust to taste)
- 1 Tbsp minced garlic (approx. 10g)
- Pinch of black pepper
- 3 Tbsp soy sauce (approx. 40g)
- 1 Tbsp cooking wine (mirin or cheongju) (approx. 12g)
- 1 Tbsp sugar (approx. 8g)
- 1 Tbsp red pepper flakes (gochugaru) (approx. 5g, adjust to taste)
- 1 Tbsp minced garlic (approx. 10g)
- Pinch of black pepper
Cooking Instructions
Step 1
First, prepare the tofu. Slice the tofu into approximately 1cm thick pieces. (This is for about 500g of tofu.)
Step 2
Pat the surface of the tofu dry with paper towels. This helps it get a nice golden brown when pan-fried. Then, lightly season both sides of the tofu with salt and pepper.
Step 3
Next, prepare the eggplant. Slice the eggplant into approximately 1cm thick pieces, on an angle, making them easy to eat.
Step 4
Finely chop the green onion for added aroma, and thinly slice the onion to bring out its sweetness in the simmer.
Step 5
Now, let’s make the delicious seasoning sauce. In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of sugar, 1 tablespoon of red pepper flakes, 1 tablespoon of minced garlic, and a pinch of black pepper. Mix well until combined. (Soy sauce 40g, Cooking wine 12g, Sugar 8g, Gochugaru 5g, Minced garlic 10g, Pinch of black pepper)
Step 6
Preheat a pan over medium heat and add a little cooking oil. Place the prepared eggplant slices in the pan and fry until golden brown. The eggplant will absorb the oil, becoming tender and flavorful.
Step 7
In the same pan used for the eggplant, add the seasoned tofu slices and pan-fry until lightly golden. Using the same pan adds the eggplant’s flavor to the tofu, making it even more delicious.
Step 8
Once one side of the tofu is golden brown and appealing, carefully flip it over. Then, arrange the fried eggplant slices on top of the tofu.
Step 9
Layer the sliced onion over the eggplant, then pour the prepared seasoning sauce evenly over everything. Finally, generously top with the chopped green onions and cover the pan with a lid.
Step 10
Now, simmer over low heat for about 5 minutes, allowing all the ingredients to meld together beautifully. The eggplant and tofu will absorb plenty of the sauce, resulting in a wonderfully tender and moist dish. Enjoy your delicious Eggplant and Tofu Simmer!
