Introducing a recipe for a nutritious tomato and egg stir-fry that can be made in just 5 minutes on busy mornings. The harmony of soft scrambled eggs and sweet-and-sour tomatoes is exquisite, and it’s also great for using up leftover vegetables from your fridge.
Main Ingredients- 1-2 large eggs
- 1-2 Tbsp milk (for extra tenderness)
- Pinch of salt
- Pinch of black pepper
- Generous amount of olive oil
- 1-2 ripe tomatoes (cherry tomatoes work too!)

Step 1
First, prepare your vegetables and mushrooms. Cut or separate the broccoli into bite-sized pieces and trim the oyster mushrooms similarly. Slice the tomatoes into wedges or halve them if using cherry tomatoes, aiming to retain their fresh taste. Feel free to add any other vegetables you have on hand, such as onions or bell peppers.
Step 2
In a bowl, crack 1-2 eggs. Add 1-2 tablespoons of milk to make the scrambled eggs extra soft and moist. Season with a pinch of salt and pepper. Whisk gently with a fork or whisk until the yolks and whites are just combined. Over-whisking is not necessary; a gentle mix is sufficient.
Step 3
Heat a non-stick pan over medium heat and add a generous amount of olive oil. It’s important not to let the oil get too hot. Slowly pour the beaten egg mixture into the pan through a sieve. Using a sieve will help create fluffy and tender scrambled eggs.
Step 4
Reduce the heat to low. Before the eggs are fully cooked, quickly stir them with chopsticks or a spatula, gently scraping the bottom of the pan. The key to tender scrambled eggs is to cook them gently, stirring constantly as they set. Remove from heat when about 80% cooked, and the residual heat will finish cooking them to a perfect, soft consistency.
Step 5
Push the scrambled eggs to one side of the pan, or use a clean pan. Add a little more olive oil and stir-fry the sliced tomatoes, prepared vegetables, and mushrooms over medium heat. Avoid overcooking the tomatoes to maintain their slight crispness and fresh flavor.
Step 6
Season the stir-fried vegetables lightly with salt and pepper. For an extra flavor boost, drizzle about 1/2 tablespoon of plum balsamic vinegar. (If you don’t have plum balsamic vinegar, regular balsamic vinegar or a splash of lemon juice will also work.) Finally, gently combine everything with the scrambled eggs.
