Ingredients- 1/2 block Tofu
- 1 Tbsp Broccoli
- 2/3 Tbsp Dried Anchovies (small)
- 1 Egg
Cooking Instructions
Step 1
First, toast the dried anchovies in a dry pan to remove any moisture. If you are concerned about the saltiness of the anchovies, you can rinse them 3-4 times in water before toasting. It’s important to toast them in the dry pan for a longer period to ensure all moisture is evaporated. Residual moisture can lead to a fishy smell, so make sure they are completely dry and crisp.
Step 2
Cut the tofu into bite-sized pieces. Then, pat them dry thoroughly with paper towels to remove excess water. Removing the water from the tofu is crucial for the pancakes to hold their shape well while cooking and prevent them from breaking apart.
Step 3
For the broccoli, use only the florets and discard the thick, hard stems. Finely mince the broccoli florets. You’ll need about 1 tablespoon of minced broccoli, measured by an adult’s tablespoon.
Step 4
Once the anchovies are toasted and dry, grind them into a fine powder. You can use a mortar and pestle or a food processor for a finer consistency. Aim for a powder-like texture.
Step 5
In a bowl, crack one egg and whisk it well. Add the minced broccoli (1 Tbsp) and the ground anchovies (2/3 Tbsp) to the whisked egg and mix everything thoroughly. (Note: While 1 Tbsp of anchovies is usually recommended, I used slightly less than the broccoli because I did not rinse them, so they might be saltier.)
Step 6
Now, coat the prepared tofu pieces evenly with the egg mixture. Before placing the coated tofu directly into the pan, it’s helpful to place them on a tray or plate for a moment. This helps the edges cook neatly. Heat a lightly oiled pan over medium heat. Pan-fry the egg-coated tofu pieces until golden brown on both sides.
