Nutritious Carrot Kimbap
Carrot Kimbap: Make it Delicious with Just 3 Key Ingredients, No Fuss!
Vitamin A in carrots is fat-soluble, meaning it’s absorbed much better when consumed with oil. Even though it’s a bit of an extra step, stir-frying the carrots makes this Carrot Kimbap both flavorful and highly nutritious! Here’s a simple yet delicious recipe.
Main Ingredients- 3-4 carrots
- 6-8 eggs
- 3 strips of pickled radish (danmuji)
Rice Seasoning- 1.5 bowls of cooked rice (approx. 320g)
- 1 Tbsp sesame oil
- 1/2 tsp salt
- 1 Tbsp toasted sesame seeds
- 1.5 bowls of cooked rice (approx. 320g)

Cooking Instructions
Step 1
Prepare 3-4 fresh carrots, wash them thoroughly, and julienne them as finely as possible. Add 1 teaspoon of salt to the julienned carrots, mix gently, and let them sit for about 15 minutes to draw out moisture.
Step 2
After 15 minutes, squeeze out the excess water from the salted carrots by hand. This step helps to retain the carrots’ crisp texture and makes them ideal for kimbap filling.
Step 3
Lightly oil a frying pan and heat it over high heat. Stir-fry the squeezed carrots for about 3-4 minutes. This process brings out the carrots’ natural sweetness and increases the absorption of Vitamin A.
Step 4
In a bowl, crack 6 eggs. Add 1 teaspoon of sesame oil and 1/3 teaspoon of salt. Whisk gently, avoiding too much foam, until well combined. The number of eggs can be adjusted to your preference.
Step 5
Lightly oil a heated pan, then wipe it with a paper towel to create a non-stick surface. Reduce the heat to low and pour a thin layer of the egg mixture. Once the egg is halfway set, place the stir-fried carrot strips and roll it from the front. If there’s remaining egg mixture, pour it around the edges of the pan and continue rolling to create a thick omelet. Repeat this process 2-3 times to make a thick carrot omelet filled with plenty of carrots.
Step 6
In 1.5 bowls of warm cooked rice (approx. 320g), add 1 tablespoon of sesame oil, 1/2 teaspoon of salt, and 1 tablespoon of toasted sesame seeds. Gently mix with a spatula, being careful not to mash the rice grains, to create a fluffy, seasoned rice.
Step 7
Place a sheet of seaweed on a bamboo rolling mat. Spread the seasoned rice thinly over the seaweed. Place the prepared carrot omelet and pickled radish strips on top, then roll the kimbap tightly. Slice into desired pieces and enjoy!
