Rice Ingredients
  • 4 Tbsp soaked chopped seaweed
  • 10 shrimp (fresh or rehydrated dried shrimp)
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking wine (mirin)
  • 1 Tbsp soy sauce
  • 200ml water

Seasoning Sauce Ingredients
  • 2 Tbsp soy sauce
  • A little Cheongyang chili pepper (minced)
  • 0.5 tsp minced garlic

Cooking Instructions

Step 1

Today, we’re going to make a special rice dish using Goyang Gawaji No. 1 rice, which is known for its wonderful chewy texture. This rice has a beautiful sheen and a delightfully chewy grain, adding both flavor and nutrition to your meal.

Step 2

We’ll be making enough rice for two servings. A full rice bowl usually serves two people. For this recipe, you’ll need: 4 tablespoons of soaked and chopped seaweed, 10 shrimp (fresh or dried shrimp that have been rehydrated), and 1 cup of rice.

Step 3

To ensure the rice is extra soft and chewy, soak it in water for about 30 minutes before cooking. While the seaweed is soaking, go ahead and soak the rice too.

Step 4

Once the seaweed is well-soaked, chop it into small, bite-sized pieces. If you’re using fresh shrimp, you can use them as they are. If you’re using dried shrimp, soak them in cold water for about 10 minutes until they are rehydrated. You can even use the water the dried shrimp soaked in for cooking the rice!

Step 5

Drain the soaked rice and add the chopped seaweed, 1 tablespoon of cooking wine, 1 tablespoon of soy sauce, and 1 tablespoon of sesame oil. Mix everything together well with the rice. Seasoning the rice beforehand helps the flavors distribute evenly throughout the dish.

Step 6

Add all the prepared shrimp to the rice mixture and pour in 200ml of water. Since the rice was pre-soaked, you’ll need slightly less water than you would for regular rice. Cook the rice using your rice cooker’s ‘standard’ or ‘quick’ setting.

Step 7

While the rice is cooking, let’s prepare the seasoning sauce. In a small bowl, combine 2 tablespoons of soy sauce, a little finely minced Cheongyang chili pepper, 0.5 teaspoon of minced garlic, some chopped green onions, and a sprinkle of sesame seeds. Mix well for a perfectly spicy and savory sauce.
