Main Ingredients- 1 Chicken breast (approx. 150-200g)
- 2 bowls of warm cooked rice
- 1/4 Onion
- A handful of your favorite mushrooms (e.g., shiitake, button)
- 1/5 Carrot
- 1/5 Zucchini
- 1 Tbsp Cooking oil
- 1.5 Tbsp Curry powder
- 1 Tbsp Soy sauce
- 1/3 stalk Green onion (chopped)

- 1 Tbsp Cooking wine (Mirin or Sake)
- 1 Tbsp Soy sauce
- Pinch of Black pepper

Cooking Instructions
Step 1
First, cut the chicken breast into bite-sized pieces. In a bowl, combine the chicken breast with the marinade ingredients (0.5 Tbsp minced garlic, 1 Tbsp cooking wine, 1 Tbsp soy sauce, a pinch of black pepper). Mix well and let it marinate for 10 minutes. This step tenderizes the chicken and removes any unpleasant odors.
Step 2
Wash and pat dry the vegetables you’ll be using for the fried rice. Dice them into small cubes, about 0.3cm, similar in size to the chicken pieces. Feel free to use any leftover vegetables you have in your refrigerator, such as bell peppers or broccoli.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the marinated chicken breast and stir-fry for about 3-4 minutes until the exterior turns white and is cooked through.

Once the chicken is mostly cooked, add all the diced vegetables to the pan and stir-fry together. Cook over medium-high heat for about 2 minutes, then add 1 Tbsp of soy sauce and mix well to ensure the vegetables are coated.

Finally, add 2 bowls of warm cooked rice to the pan. Use a spatula to break up any clumps and mix the rice thoroughly with the other ingredients. Sprinkle 1.5 Tbsp of curry powder evenly over the rice and stir-fry for another 2 minutes, taking care not to burn the curry powder. This will create a delicious curry-scented fried rice.
