The perfect accompaniment to duck dishes! I decided to transform leftover nutritious chives into a delightful pickle rather than letting them go to waste. They soften beautifully, offering a wonderfully sweet and tangy flavor. This is a fantastic side dish to awaken your appetite.
Pickle Ingredients- 1 bunch fresh nutritious chives
- 1/4 onion, thinly sliced
- 2 Korean chili peppers (Cheongyang), thinly sliced diagonally
- 3 cups water
- 1 cup sugar (adjust to taste)
- 2 slices lemon
- 1 cup vinegar (rice vinegar or apple cider vinegar recommended)
- 3 Tbsp soy sauce
- 1 Tbsp salt
- 1 sterilized glass jar (with a wide mouth, at least 10cm)
Cooking Instructions
Step 1
First, thoroughly wash the nutritious chives under running water. After washing, it’s crucial to pat them as dry as possible using a cheesecloth or paper towels. Excess moisture can cause the pickles to spoil easily.
Step 2
In a pot, combine 3 cups of water, 1 cup of sugar, 3 Tbsp of soy sauce, and 1 Tbsp of salt. Bring to a boil over medium heat. Once it boils, turn off the heat and let it cool for 1-2 minutes. Stir in 1 cup of vinegar while it’s still warm to create the tangy pickle brine.
Step 3
Place 1 lemon slice at the bottom of your pre-sterilized and dried glass jar. Then, layer the dried nutritious chives (cut into manageable pieces), thinly sliced onion, and diagonally sliced Korean chili peppers into the jar.
Step 4
Top the vegetables with the remaining lemon slices. Pour the prepared pickle brine over everything, filling the jar. Seal the lid tightly. Let it sit at room temperature for one day to allow the flavors to meld. After a day, store it in the refrigerator. Enjoy the enhanced, deep flavor after 3-4 days of ripening.
