The Secret to Delicious Japanese Curry Rice Everyone Will Love
It’s been so long since we last enjoyed this delicious Japanese curry rice! I absolutely love curry, but my son used to dislike it, so we couldn’t make it for a while. I decided to make it for us, and if he didn’t like it, he could just skip it! As the fragrant curry aroma filled the kitchen, everyone’s faces lit up with joy. The vibrant colors of the assorted vegetables, combined with the rich curry powder and an extra boost of turmeric, created a deeply flavorful and wonderfully satisfying meal.
Main Ingredients- Carrots (various colors, small amount each)
- Potatoes (3 medium)
- Onion (1 medium)
- Ham (as desired)
- Red Bell Pepper (1/2)
- Green Bell Pepper (1/2)
Cooking Instructions
Step 1
First, dice the ham and all the prepared vegetables (potatoes, onion, carrots, bell peppers) into uniform, bite-sized cubes. This ensures they cook evenly and are easy to eat. In a small bowl, whisk together the curry powder, turmeric powder, and cornstarch until well combined and lump-free. Mixing them beforehand will help create a smooth sauce when you add it to the pot.
Step 2
Heat a generous amount of cooking oil in a large pot or deep pan over medium heat. Add the cubed potatoes, onions, and carrots, and sauté until the onions become translucent and the potatoes and carrots start to soften slightly. Pour in 2 cups (approx. 400ml) of water and bring to a boil. Once boiling, gradually whisk in the pre-mixed curry powder, turmeric, and cornstarch mixture, stirring constantly to prevent lumps. Continue to cook until the sauce thickens and the potatoes are almost tender. Then, add the diced ham, red bell pepper, and green bell pepper, and simmer for a few more minutes. Season with salt and pepper to taste. Be careful not to overcook at this stage to preserve the vibrant colors of the vegetables. (Tip: If using purple carrots, add them towards the end of cooking to maintain their beautiful color.)
Step 3
Serve warm rice in a bowl and generously ladle the delicious homemade curry over it. The vibrant array of colorful vegetables makes this curry rice not only visually appealing but also incredibly delicious. It’s a wonderful dish that the whole family can enjoy together.
