Cooking Instructions
Step 1
First, carefully prepare all the ingredients needed to make these delicious and nutritious potato breads. Precise measurements will contribute to a more perfectly baked outcome.
Step 2
Fill a pot with plenty of water and steam the washed potatoes. Cook them with the skins on for about 20-30 minutes, or until they are completely tender and easily pierced with a fork. They are ready when a fork slides in with no resistance.
Step 3
While the potatoes are steaming, let’s make the homemade, creamy soy milk mayonnaise! In a blender or using a hand blender, combine 50g of thick soy milk, 50g of grapeseed oil, 5g of apple cider vinegar, 10g of sugar, and 1g of sea salt. Blend for approximately 40 seconds until smooth and creamy. Your homemade mayonnaise is ready!
Step 4
Once the potatoes are steamed and tender, peel them while they are still warm and place them in a large bowl. Add 3 tablespoons of the homemade soy milk mayonnaise, 1 tablespoon of sugar, 3 tablespoons of drained canned corn, and 1 strip of finely chopped cooked bacon. Mix everything together.
Step 5
Pour in 50g of warm soy milk and mash the potatoes thoroughly using a fork or potato masher. Ensure all ingredients are well combined to create a moist and flavorful potato filling.
Step 6
Now, it’s time to make the dough. In a large bowl, combine 150g of rice flour, 1 tablespoon of melted butter, 5g of grated Parmesan cheese, 1 tablespoon of sugar, and a pinch of salt. Mix them lightly.
Step 7
Crack 1 egg into the dough mixture and pour in 60g of warm soy milk. Use a chopstick or spatula to mix the ingredients until they just start to come together.
Step 8
Bring all the ingredients together and knead gently until no dry flour remains, creating a soft dough. Cover the bowl with plastic wrap or a damp kitchen towel and let it rest at room temperature for 10 minutes. This resting period helps the dough become more pliable.
Step 9
After resting, divide the dough into 9 to 10 equal portions. Each portion should weigh approximately 40-50g.
Step 10
Round each dough portion into a ball and gently press down the center to create an indentation. Spoon a generous amount of the prepared potato filling into this cavity.
Step 11
Carefully pinch the edges of the dough together to seal the filling inside. Ensure there are no gaps where the filling could escape. Then, gently roll the dough between your palms, pressing firmly as if you were shaping a snowball, to create a smooth, round shape.
Step 12
Roll the shaped dough balls evenly in a dish filled with soybean powder, coating both sides. This coating will give the breads a delicious nutty flavor and an appealing golden-brown color when baked.
Step 13
Finally, use a chopstick or skewer to poke the top of the bread several times, creating a rustic ‘ugly potato’ look. This decorative step also helps prevent the bread from bursting excessively as it bakes.
Step 14
Arrange the potato breads on a baking sheet and bake in a preheated oven at 180°C (350°F) for approximately 13 to 15 minutes, or until the tops are golden brown. Adjust the baking time based on your oven’s performance.
Step 15
Remove the hot potato breads from the oven and let them cool slightly on a wire rack. Your nutritious potato breads, with their perfectly crispy exterior and moist, flavorful interior, are now ready! Enjoy your delicious creation!
