  • 1/2 cup short-grain rice (approx. 90g)
  • 1/2 cup glutinous rice (approx. 80g)
  • 2 Tbsp sesame oil
  • Toasted sesame seeds, for garnish
  • Salt, to taste

1. Rinse the short-grain rice and glutinous rice thoroughly, then soak them in water for about 1 hour. Soaking makes the porridge wonderfully soft and creamy. 2. Use a scrub brush to meticulously clean the abalones under running water, ensuring any grit between the shell and flesh is removed.

3. It’s time to separate the abalone meat from its shell. Carefully insert the tip of a spoon between the shell and the meat, then gently pry to detach. Press down on the thicker part of the shell’s edge to help loosen the meat. Be cautious as the thinner edge of the shell can be sharp.

4. The abalone’s roe (the green part) adds a rich flavor and color to the porridge. If you prefer a milder taste or find it bitter, you can trim it off. Use scissors to cut it away cleanly. 5. Locate the hard, chewy ‘beak’ or mouth at the underside of the abalone and carefully cut it out with a knife. This part is tough and unpleasant to eat.

6. Slice the cleaned abalone into bite-sized pieces. Aim for about 0.5cm thickness for even cooking. Finely chop the abalone roe with scissors; this will distribute its rich flavor throughout the porridge.

7. Combine the chopped abalone roe with the soaked rice in a bowl. Gently mix them together. This step helps to infuse the rice grains with the savory essence of the abalone roe from the start.

8. Heat 2 tablespoons of sesame oil in a pot over medium heat. Once the oil is warm, add the sliced abalone and stir-fry for about 1-2 minutes until it becomes fragrant and slightly opaque. Sautéing the abalone first releases its delightful aroma. 9. When the abalone is partially cooked, add the rice and abalone roe mixture. Continue to stir-fry for another 2-3 minutes until the rice grains become translucent and everything is nicely toasted.

10. Pour in water to cook the porridge. A good starting ratio is about 3 cups of water for every 1 cup of rice, but feel free to adjust for your desired consistency. 11. Bring the mixture to a boil over high heat, then reduce to low, cover loosely (or leave slightly ajar), and simmer until the rice is fully broken down and the porridge has thickened. Stir occasionally to prevent sticking. 12. Season with salt to your preference. You can also add a pinch of black pepper or a generous sprinkle of toasted sesame seeds for extra flavor.
