First, prepare the squash leaves. Trim off the tough stems, as they can be fibrous, and use only the tender leaf parts. Place the squash leaves in a steamer basket and steam for about 5 minutes once the water is boiling. Once steamed, carefully remove the leaves and let them cool. Be mindful not to overcook, as they can become mushy.

Next, prepare the fermented shrimp paste (jeotgal) that will enhance the flavor of your wraps. While various jeotgals are delicious, today we’re using Toha-jeot for its exceptional umami. Using Toha-jeot instead of regular ssamjang (seasoned soybean paste) offers a unique and deep flavor.

Now, let’s assemble the wraps! Lay out the prepared squash leaves flat, with the rougher side facing upwards. Place a moderate amount of warm rice on top of the leaf.
