Packed with chewy glutinous rice dough, wholesome nuts, and sweet-tart cranberries, just one piece is incredibly filling and makes for a perfect snack. It’s also a fantastic, simple meal option for busy mornings or when you need a quick energy boost.

Glutinous Rice Pie Ingredients

  • 180g glutinous rice flour (approx. 1.5 cups)
  • 250g mashed sweet potato or pumpkin (approx. 1 cup)
  • 180-200ml milk (approx. 3/4 cup to 7/8 cup)
  • Pinch of salt
  • 30g cranberries (adjust to taste)
  • 2g baking powder (approx. 1/2 tsp)
  • 50g mixed nuts (walnuts, almonds, pecans, etc.), chopped (adjust to taste)
  • 30g sugar (2 Tbsp)
  • 1 large egg (room temperature)
  • 40g sliced almonds (approx. 1/3 cup)

Cooking Instructions

Step 1

In a large bowl, crack the egg and whisk it together with the sugar and salt until well combined. Stir gently until the sugar is dissolved.

Sift the glutinous rice flour (180g) and baking powder (2g) into the bowl. Sifting ensures a smoother batter with no lumps.

Pour in 180ml of milk and mix with a spatula or spoon until no dry flour remains. Gradually add more milk, up to 200ml, until you reach the desired batter consistency.

The batter should have a consistency similar to or slightly thinner than Korean kimchi pancake batter. If it’s too thick, the pie might turn out hard.

Add the mashed sweet potato or pumpkin (250g), cranberries, and about 50g of your favorite chopped nuts to the batter. Mix well until everything is evenly distributed and there are no lumps.

Grease your baking pan (round or square) thoroughly with oil or butter. This prevents the pie from sticking, ensuring a clean release after baking.
