  • 5-6 Tbsp Shelled Snail Ssamjang (or your preferred Ssamjang)
  • 2 Tbsp sesame oil

First, prepare your fresh kale leaves. Wash them thoroughly under running water to remove any dirt or debris.

Add a pinch of salt to boiling water. This helps maintain the vibrant green color of the kale and minimizes nutrient loss. Blanch the kale leaves for exactly 40 seconds. Be careful not to overcook them, as they will become mushy.

Immediately rinse the blanched kale under cold running water to cool them down. This step is crucial for preserving the kale’s crisp texture. Gently squeeze out excess water and set aside.

Now it’s time to season the rice. If you have Shelled Snail Ssamjang, use that. Otherwise, any kind of store-bought or homemade ssamjang works beautifully with this dish. In a bowl, combine 2 bowls of rice with 5-6 Tbsp of ssamjang, 2 Tbsp of sesame oil, and a pinch of sesame seeds. Gently mix with a spatula, being careful not to mash the rice grains, until well combined. Adjust the amount of ssamjang based on its saltiness.

Place a portion of the seasoned rice onto a prepared kale leaf. If your kale leaves are on the smaller side, you can overlap two leaves to prevent the rice from falling out and to create a neater shape.
