Essential Ingredients

  • 1 mini kabocha squash
  • 1/2 cup brown rice
  • 1/4 cup black rice
  • 1/4 cup glutinous brown rice
  • 1/4 cup glutinous rice
  • Pinch of salt

Cooking Instructions

Step 1

First, prepare to cook delicious glutinous rice. Rinse the brown rice, black rice, glutinous brown rice, and glutinous rice thoroughly. Soak the washed rice in clean water in a cool place overnight (about 8 hours or more) to allow it to swell fully. This soaking process will result in chewier and softer rice grains.

Step 1

Step 2

Drain the rice that has been soaked overnight using a sieve. When adding water for cooking, use slightly less than you normally would. Glutinous rice can become mushy if it’s too watery, so adjusting the water to about a 1:1 or 1:1.1 ratio with the rice is recommended. Adding a pinch of salt to the cooking water can enhance the rice’s flavor. Place the prepared rice, water, and salt into an electric rice cooker and cook using the quick white rice or standard cooking mode.

Step 2

Step 3

Wash the mini kabocha squash thoroughly under running water. Scrubbing gently with a little baking soda can help remove any stubborn dirt or residue from the peel. Carefully slice off the top part of the squash and use a spoon to scoop out the seeds and fibrous insides cleanly. Once the inside is hollowed out, carefully fill it with the cooked rice using a spoon. Be careful not to overfill the squash. Place the sliced-off top back on as a lid.

Step 3

Step 4

Fill a steamer pot with water and bring it to a boil. Once the water is boiling, carefully place the rice-filled mini kabocha squash into the steamer and cover it with the lid. Steam for about 15 to 20 minutes. To check if it’s done, insert a chopstick into the kabocha; it should go in smoothly. If the chopstick doesn’t pass through easily, continue steaming for a few more minutes until tender. Your delicious Kabocha rice is ready! It’s best enjoyed warm.
