Rice Ingredients- 4 servings Rice (approx. 2 cups)
- 1/2 Lotus root (approx. 90g)
- 2 Tbsp Rice vinegar
- Water, as needed
- 2 medium Potatoes
- 2 Shiitake mushrooms
- 30g Carrot
- 70g Ground beef
Beef & Shiitake Marinade- 1 Tbsp Soy sauce
- 1 tsp Sugar
- 1 tsp Sesame oil
- 1 tsp Minced garlic
- 1 tsp Minced green onion
Seasoned Dill Sauce- 3 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1 Tbsp Mirin (rice wine)
- 2 Tbsp Dill, finely chopped
- 1/2 tsp Minced garlic
- 1 tsp Toasted sesame seeds
- 30g Dill (cleaned and trimmed)
- 1 Tbsp Soy sauce
- 1 tsp Sugar
- 1 tsp Sesame oil
- 1 tsp Minced garlic
- 1 tsp Minced green onion
Seasoned Dill Sauce- 3 Tbsp Soy sauce
- 1 Tbsp Sesame oil
- 1 Tbsp Mirin (rice wine)
- 2 Tbsp Dill, finely chopped
- 1/2 tsp Minced garlic
- 1 tsp Toasted sesame seeds
- 30g Dill (cleaned and trimmed)
Cooking Instructions
Step 1
First, peel the lotus root and slice it thinly, about 0.5cm thick. To prevent browning, soak the sliced lotus root in a bowl of water with 2 tablespoons of rice vinegar for 5 minutes.
Step 2
Bring a pot of water with a pinch of salt to a boil. Blanch the lotus root (after draining it from the vinegar water) for 1-2 minutes. This helps maintain its crisp texture and removes any astringency. Rinse the blanched lotus root under cold water and drain.
Step 3
In a bowl, combine the beef and shiitake marinade ingredients (1 Tbsp soy sauce, 1 tsp sugar, 1 tsp sesame oil, 1 tsp minced garlic, 1 tsp minced green onion). Add the ground beef and 1 finely chopped shiitake mushroom. Mix well and let it marinate for at least 30 minutes for the flavors to meld.
Step 4
Clean the remaining shiitake mushroom, remove the stem, and slice it thinly. Peel the potatoes and dice them into roughly 1cm cubes. Peel and julienne the carrot for a touch of color.
Step 5
Rinse the rice and soak it in water for over an hour, then drain thoroughly. Place the soaked rice in a rice cooker and add water in equal proportion to the rice. Arrange the prepared lotus root, diced potatoes, carrots, and sliced shiitake mushrooms on top of the rice. (If using a pressure cooker): Cook on high heat until the pressure cooker whistles, then reduce to medium-low heat and cook for another 5-10 minutes. Let it steam for 5-10 minutes. For a standard rice cooker, cook as usual. This will result in delicious lotus root and potato rice.
Step 6
Heat a pan over high heat. Add the marinated beef and shiitake mixture and stir-fry quickly until the sauce coats the meat. Break up the meat with chopsticks or a spatula while stir-frying to ensure it cooks evenly and retains its juices.
Step 7
Finally, prepare the seasoned dill sauce. Wash the dill thoroughly under running water, trim the root end, and chop it finely. In a small bowl, combine the chopped dill with the sauce ingredients (3 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp mirin, 1/2 tsp minced garlic, 1 tsp toasted sesame seeds). Mix well. (Optional: Add a pinch of red pepper flakes or sugar to taste). Serve the lotus root and potato rice in a beautiful bowl. Top with the stir-fried beef and shiitake mixture. (Optional garnish): You can make a thin omelet with egg yolks, slice it, or use a cookie cutter for decorative shapes. Add the prepared seasoned dill sauce to the rice and mix well.
