Try making fluffy egg rolls with plenty of rice and vegetables that kids love! They make a satisfying meal, and even picky eaters who only eat eggs will enjoy them with rice. Here’s the golden recipe for an extra special egg roll with rice.
This recipe is perfect for a delightful side dish or a light meal. The added rice makes it more substantial and provides a pleasant texture contrast to the soft eggs and crisp vegetables.
Main Ingredients- 10 large eggs
- 6 stalks scallions
- Pinch of ham
- Pinch of carrot
- 1/2 onion

Cooking Instructions
Step 1
First, finely chop all the vegetables and ham that will go into the egg roll. Mince the scallions, and finely dice the carrot and onion. Chop the ham into small, bite-sized pieces. In a bowl, combine these prepared ingredients with 10 eggs. Lightly season with salt and whisk everything together until well combined. Don’t be surprised by the 10 eggs; this amount makes a hearty meal for the whole family!
Step 2
Now it’s time to cook the egg roll. Heat a generous amount of cooking oil in a non-stick skillet over medium-low heat. Pour in the egg mixture. Once the egg begins to set slightly, tilt the pan and gently slide the cooked portion towards the edge closest to you. This helps to create a tighter roll.
Step 3
Carefully roll the egg mixture onto itself, spreading it thinly as you go. Don’t worry if the first roll isn’t perfectly round. The main goal at this stage is to enclose the filling without letting it spill out. You can shape it later.
Step 4
Slide the rolled egg cylinder to one side of the pan. Pour more of the egg mixture into the empty space. As this new layer of egg begins to set, roll the existing egg roll into it, enclosing it. Repeat this process, adding more egg mixture and rolling, until all the egg mixture is used. Finally, gently press the egg roll on all sides to shape it into a neat rectangle or cylinder. This ensures the inside is cooked through and the roll holds its shape beautifully.
Step 5
You can also make a special version with rice using the same method. Mix cooked rice into the egg mixture before rolling. This adds a delightful texture and makes the egg roll even more filling.
