Nutritious Shiitake Mushroom Rice Bowl
Flavorful Shiitake Mushroom Rice Cooked in a Pot!
When shiitake mushrooms are in season, I prepare a nutritious pot rice for my family. This hearty dish is filled with the wonderful aroma of shiitake mushrooms that fills your mouth.
Ingredients- 3 cups short-grain rice (soaked)
- 200g shiitake mushrooms
- 20 ginkgo nuts
- 2 pieces dried kelp (kombu)
Shiitake Mushroom Seasoning Sauce- 3 Tbsp soy sauce
- A little wild chives (minced)
- 1/2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/2 Tbsp red pepper flakes (gochugaru)
- 1/2 Tbsp minced garlic
- 1 Tbsp sugar
- 3 Tbsp soy sauce

Cooking Instructions
Step 1
I wanted to take care of my family’s health with this nutritious shiitake mushroom pot rice.
Step 2
Prepare the soaked rice, ginkgo nuts, and shiitake mushrooms. Wash the rice thoroughly and soak it for about 30 minutes. Clean the shiitake mushrooms, remove the stems, and slice them. Peel the ginkgo nuts.
Step 3
Cook the rice in a pot with the soaked rice. Add about 3 to 3.5 cups of water for 3 cups of rice. Place the 2 pieces of dried kelp on top of the water and start cooking the rice.
Step 4
Once the water starts to boil, reduce the heat to low. As the water level lowers, add the sliced shiitake mushrooms and the prepared ginkgo nuts evenly over the rice.
Step 5
Close the lid tightly and let it steam on very low heat for about 10-15 minutes to allow the rice to become moist. Remove the kelp before steaming.
Step 6
If you have green onions, wash and finely chop them. Add the chopped green onions generously over the rice during the final stage of cooking.
Step 7
The aroma of shiitake mushrooms and green onions is truly wonderful.

The rice has cooked perfectly fluffy and delicious.

Gently mix the rice with a spatula, being careful not to mash the grains. Combine the shiitake mushrooms and rice thoroughly to create a beautifully finished pot rice.
