First, wash the 260g of potatoes thoroughly, peel them, and then cut them into strips about 0.5cm thick. After slicing, rinse the potatoes lightly under cold water to remove excess starch. This prevents them from sticking together when fried and helps maintain a crisp texture. Drain them completely.

Julienne the carrot to a similar thickness as the potatoes. Place the carrot in a microwave-safe dish, cover with plastic wrap or a lid, and microwave for about 4 minutes until tender. This step shortens the cooking time and results in a softer texture. (This step is optional.)

Wash the chives and pat them dry. Cut them into segments of about 3-4cm. Avoid cutting them too finely, as they can become mushy when stir-fried. Aim for a manageable size.

Heat a frying pan over medium-low heat. Add a little cooking oil to coat the pan. (If stir-frying without oil, be mindful of sticking and stir frequently.) Add the prepared potatoes and the pre-cooked carrots to the pan. Stir-fry gently until the ingredients are well combined and the potatoes begin to turn translucent.

Once the potatoes and carrots are somewhat tender, add the cut chives and stir-fry briefly. Chives cook very quickly; to maintain their freshness and a pleasant texture, stir-fry for only about 30 seconds to 1 minute until they just begin to wilt.

As soon as the chives have wilted slightly, turn off the heat. Season with 4 pinches of coarse sea salt. Adjust the salt according to your personal preference. It’s best to start with less salt and add more after tasting.
