Main Ingredients- 60g fresh spinach
- 5 large eggs
- 1/2 cup milk (approx. 100ml)
- 1/2 small onion
- 1/4 red bell pepper
- 1/4 yellow bell pepper
- 1 medium potato
- 3 strips bacon (or ham/sausage)
- 1 slice bread
- 2 slices cheddar cheese
Cooking Instructions
Step 1
First, wash the 60g of fresh spinach thoroughly, pat it dry, and then chop it into approximately 1cm lengths for easy eating.

Peel and thinly slice the 1/2 small onion, then cut it into roughly 1cm pieces, similar to the spinach.

Remove the seeds from the red and yellow bell peppers, wash them well, and finely dice them. This adds a beautiful color to the frittata.

Peel the medium potato, rinse it under cold water to remove excess starch, and then slice it thinly and small. Cutting it too thick might increase the cooking time.

Cut the 3 strips of bacon into about 1cm wide pieces. If you don’t have bacon, you can use ham or sausage cut into similar pieces for a delicious alternative.

Remove the crusts from the 1 slice of bread and cut it into small, dice-sized pieces, about 1cm. The bread will add a lovely softness to the frittata.

In a large bowl, crack the 5 eggs and pour in the 1/2 cup of milk (about 100ml). Add a pinch of salt and a pinch of black pepper, then whisk everything together until well combined to create the egg mixture.

Heat a dry non-stick pan over medium heat and add the sliced bacon. Cook the bacon until it renders its fat; you don’t need to add any extra cooking oil.

Once the bacon is nicely browned, add the sliced potato, onion, and bell peppers to the pan. Sprinkle with a pinch of salt and pepper, and stir-fry until the vegetables are slightly softened and translucent.

When the vegetables are partially cooked, add the chopped spinach and stir-fry quickly until it just wilts. Cooking the spinach briefly helps it retain its vibrant color.

Pour the whisked egg mixture into the large bowl containing the cooked bacon and vegetables. Add the diced bread and gently mix everything together to ensure all ingredients are evenly coated with the egg mixture.

Lightly grease a heated pan (use olive oil or cooking oil) over low heat. Pour in the entire frittata mixture. Immediately use a chopstick or spatula to gently stir the bottom of the pan, as if making scrambled eggs, for about 15-20 seconds. This prevents ingredients from clumping and ensures even cooking. Then, spread the mixture evenly to form a thick, flat layer.

Once the surface of the mixture begins to set, tear the 2 slices of cheddar cheese into pieces and scatter them evenly over the top of the frittata. For an even richer and chewier texture, feel free to add some mozzarella cheese as well!

Cover the pan with a lid and reduce the heat to low. Let it cook slowly for about 7-8 minutes, or until the cheese is melted and the frittata is cooked through. The exact cooking time may vary depending on your stove’s heat and the thickness of the frittata, so peek occasionally to ensure it’s not burning and is cooked evenly.
