Main Ingredients- Tofu noodles, 100g
- Ripe tomatoes, 2 medium
- Fresh eggs, 2 large
- Thick-cut bacon, 2 strips
- Onion, 1/4 medium
Flavorful Seasoning- Low-sugar oyster sauce, 1 Tbsp
- Allulose, 1 Tbsp (or your preferred sugar substitute)
- Soy sauce, 1 Tbsp

Cooking Instructions
Step 1
First, thinly slice the bacon into strips about 0.5cm thick. Also, thinly julienne the onion. Slicing them this way ensures even cooking and a pleasant texture.
Step 2
Wash the tomatoes thoroughly, then cut them into bite-sized pieces. Avoid cutting them too small, as they can become mushy during stir-frying. Aim for a manageable size.
Step 3
Heat 1-2 Tbsp of cooking oil in a pan over medium heat. Add the julienned onion and sliced bacon, and stir-fry until golden brown and fragrant. The bacon fat will render and add delicious flavor to the onions.
Step 4
Once the onions become translucent, add the chopped tomatoes. Now, pour in the prepared low-sugar oyster sauce (1 Tbsp), allulose (1 Tbsp), and soy sauce (1 Tbsp). Stir gently over medium-low heat, just until the tomatoes are slightly softened, being careful not to burn the sauce.
Step 5
Push the stir-fried ingredients to one side of the pan to create space. Pour the beaten eggs into the empty space and scramble them by stirring with chopsticks or a fork until just cooked. Once the scrambled eggs are set, mix them gently with the other ingredients.
Step 6
Finally, add the drained tofu noodles to the pan. Using chopsticks or a spatula, gently toss everything together to ensure the tofu noodles are evenly coated with the sauce and other ingredients. Be careful not to overcook the tofu noodles, as they can break apart. Stir-fry for just 1-2 minutes until heated through. For an extra touch, sprinkle with chopped fresh parsley before serving. Enjoy!
