Main Ingredients- 1/2 block Acorn Jelly (approx. 300g)
- 1 handful Water Parsley (approx. 50g)
- 1 handful Crown Daisy (approx. 50g)
- 1/4 Carrot (julienned, approx. 50g)
- 1/4 Onion (julienned, approx. 50g)
Cooking Instructions
Step 1
First, prepare the acorn jelly. If you’ve made it homemade, slice it using a jelly slicer. Using a jelly slicer not only makes the jelly look pretty but also helps it grip better with chopsticks, preventing slippage. (Tip: Actually, acorn jelly is often easier to eat with a spoon than chopsticks!)

Next, prepare the fresh vegetables. Cut the water parsley and crown daisy into approximately 4cm lengths. Julienne the carrot and onion. Feel free to add other vegetables you have on hand, such as lettuce, perilla leaves, or cucumber, for added variety. Using either water parsley or crown daisy alone will significantly enhance the aroma. Prepare your selection of nuts: pumpkin seeds, sliced almonds, walnuts, and pine nuts. You can substitute these nuts with others if you prefer.

To ensure the vegetables are crisp and refreshing, give them a quick soak. In a bowl, add about 2 tablespoons of cold water and 2 tablespoons of vinegar. Soak the cut vegetables for 5 minutes, then rinse them thoroughly under running water 2-3 times. It’s crucial to drain them very well. This step helps the vegetables stay crisp and prevents them from becoming watery when mixed with the dressing. Soaking them briefly also makes them easier to mix without clumping.

Now, let’s create the flavorful dressing. Combine 1 tablespoon of soy sauce and 1 tablespoon of anchovy sauce for a savory base. Add 1 1/2 tablespoons of gochugaru for a pleasant spiciness, 1/2 tablespoon of minced garlic for aroma, 1 tablespoon of plum extract and 1/2 tablespoon of sugar for a touch of sweetness, and 1/2 tablespoon of double strength vinegar (or 1 tablespoon of regular vinegar) for tanginess. Finally, stir in 1 tablespoon of sesame oil and 1/2 tablespoon of toasted sesame seeds. Whisk everything together until well combined.
Step 5
Place all the prepared vegetables in a large mixing bowl. Add half of the dressing and gently toss the vegetables. Be careful not to mash them, aiming for a light coating.

Add the acorn jelly to the bowl with the lightly dressed vegetables. Pour in the remaining half of the dressing. Gently mix everything together, ensuring the jelly and vegetables are well combined without breaking the jelly.
