Hodoo Bap: A Nourishing Rice Dish Perfect for Winter
A wholesome and flavorful rice dish cooked with generous amounts of walnuts, offering a delightful nutty aroma and taste with every bite. This is a perfect, hearty meal to replenish your body’s nutrients during the colder months.
Rice Ingredients- 1 cup Brown Rice
- 1 cup Germinated Brown Rice
- 1/2 cup Walnuts
- 1 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 2 cups Water (adjust based on rice type)
Cooking Instructions
Step 1
First, let’s prepare the walnuts. Break the walnuts into bite-sized pieces. Gently toast them in a dry pan over low heat until fragrant; this enhances their nutty flavor. After toasting, sift them to remove any small shell fragments or dust.
Step 2
Rinse the brown rice and germinated brown rice thoroughly and soak them for about 1 hour. (These types of rice require longer soaking than white rice). Once soaked, transfer the rice to your rice cooker. Add the toasted walnuts to the rice cooker. Cooking the rice with walnuts allows their nutty essence to infuse into every grain.
Step 3
Sprinkle 1 tablespoon of soy sauce evenly over the rice and walnuts. Add the cooking water (2 cups, or adjust as needed for your rice). For an extra depth of flavor, add a piece of dried kelp (kombu) to the rice cooker. The kelp will impart a subtle umami note to the rice.
Step 4
Cook the rice as you normally would. Once the cooking cycle is complete, let it steam for about 10-15 minutes. Before fluffing, drizzle a little flaxseed powder and perilla oil over the rice for an extra nutty aroma and healthy boost. The flaxseed powder is best sprinkled on top to preserve its fragrance.
