Nutty and Tender Dried Squid Salad (Ojingeochae Muchim)
Soft and Delicious Dried Squid Salad with Nuts – No Toughness Guaranteed!
Dried squid salad (Ojingeochae Muchim) is a favorite snack for kids and a popular appetizer for adults! Adding sliced almonds gives it a nutty flavor and a delightful chewiness, complemented by a spicy kick, making it irresistibly addictive. Let’s learn how to make this tender, non-chewy dried squid salad packed with the rich flavor of nuts.
Main Ingredients- Dried shredded squid (Ojingeochae) 2500g
- Sliced almonds 1 handful (approx. 30g)
- Cheongyang chili peppers 2
Cooking Instructions
Step 1
Soak the dried shredded squid in cold water for about 10 minutes until it becomes soft and pliable. This step helps to reduce its saltiness and ensures a tender, non-chewy texture after seasoning. After soaking, squeeze out as much water as possible by hand.
Step 2
Wash the Cheongyang chili peppers, remove the stems, and thinly slice them crosswise. These will add a pleasant spiciness to the dish.
Step 3
Toast the sliced almonds in a dry pan over low heat until fragrant. Toasting enhances their nutty flavor and removes any raw taste. Be careful not to burn them; just lightly toast until they turn slightly golden.
Step 4
Cut the water-squeezed dried squid into bite-sized pieces using scissors or a knife. If the strands are too long, they can be difficult to eat, so cutting them into smaller, manageable pieces is recommended, especially for children.
Step 5
In a mixing bowl, combine the squeezed dried squid with all the seasoning ingredients: Gochujang, soy sauce, Gochugaru, mayonnaise, and oligosaccharide.
Step 6
Gently mix the ingredients with your hands, ensuring the seasoning is evenly distributed throughout the squid. Avoid overmixing or squeezing too hard, as this can make the squid mushy. Aim for a tender coating.
Step 7
Finally, add the toasted sliced almonds and the chopped Cheongyang chili peppers to the bowl. Toss gently one more time to combine. Sprinkle with toasted sesame seeds for garnish. This creates a delicious salad with a perfect balance of nutty, spicy, and savory flavors. It can be enjoyed immediately or stored in the refrigerator as a side dish.
