Main Ingredients- 100g dried chickpeas
- 70g shelled walnuts
- 30g shelled peanuts
- 2-3 bay leaves
Seasoning- 1/2 cup soy sauce (using a paper cup for measurement)

Cooking Instructions
Step 1
First, prepare 100g of dried chickpeas. Soak the chickpeas in cold water for about 6 to 8 hours until fully rehydrated. After soaking, gently rub the chickpeas with your hands to wash them clean. Rinse them carefully to avoid peeling off the skins.
Step 2
Let’s make the delicious simmering sauce! In a pot, combine 1/2 cup of soy sauce (measured with a paper cup) and 2 Tbsp of corn syrup (or rice syrup). Add 1 cup of water, which is twice the amount of soy sauce, and stir well to mix the seasonings.
Step 3
Add the cleaned chickpeas to the pot and pour the prepared soy sauce mixture over them. Bring to a boil over medium-high heat. Once boiling, skim off any foam that rises to the surface. Next, add 2 Tbsp of cooking sake (or mirin), then reduce the heat to medium-low and simmer gently for 10 minutes.
Step 4
While the chickpeas are simmering, prepare 70g of shelled walnuts and 30g of shelled peanuts. Place them in a dry pan and toast lightly for about 1 minute. This will enhance their nutty aroma. Adding 2-3 bay leaves to the chickpea simmer will remove any unwanted odors and add a subtle fragrance.
Step 5
Add the toasted nuts to the chickpeas after simmering for 10 minutes and mix thoroughly. Continue to simmer over medium-low heat for another 5 minutes, stirring occasionally to prevent sticking. Once the sauce has mostly reduced, stir in 1 Tbsp of honey at the end for a glossy finish.
Step 6
Before turning off the heat, drizzle in 1 Tbsp of perilla oil and sprinkle with sesame seeds for an enhanced nutty fragrance. Your delicious nutty chickpea simmer is now complete.
