Nutty & Delicious ‘Ttang-ppa-myeon’ (Peanut Butter Ramen)

The versatility of ramen recipes inspired by Chef Baek Jong-won continues to delight us at home! This time, we’re making ‘Ttang-ppa-myeon,’ a ramen enriched with the delightful creaminess of peanut butter. It’s a surprisingly delicious combination that will leave you craving more! Who knew such a simple ingredient could transform instant noodles into something so special?
Ingredients- 1 packet of ramen noodles
- Generous amount of green onions, chopped
- 3 Tbsp cooking oil (or coconut oil)
- 1 Tbsp red pepper flakes (gochugaru)
- 1 Tbsp peanut butter
Cooking Instructions
Step 1
Begin by infusing oil with the fragrant essence of green onions. Heat 3 tablespoons of cooking oil or coconut oil in a pan over medium-low heat. Add a generous amount of chopped green onions and slowly sauté until the oil is richly flavored with the onion’s aroma. Be careful not to burn the onions; slow and gentle cooking is key.
Step 2
Once the oil is fragrant, add 1 tablespoon of red pepper flakes (gochugaru) and stir-fry briefly over low heat. Ensure the flakes don’t burn, and cook for about 15-20 seconds to release their aroma, mixing well with the infused oil.
Step 3
Keeping the heat low, give the mixture a quick stir to combine the red pepper flakes and onion-infused oil. Then, remove the pan from the heat and carefully pour in 2 cups (about 400ml) of cold water. This helps to balance the saltiness and spiciness of the broth.
Step 4
Place the pot with the broth back on the stove and bring it to a rolling boil over high heat. Once the broth is bubbling vigorously, it’s time to add the remaining ingredients.

For this recipe, we’re using Shin Ramyun, which I was fortunate to receive as a 3rd prize winner in a ‘Man-Gae Recipe’ event. Thank you so much! (Fun fact: this ramen can also be used to make ‘Shin Ramyun Tu-wop-pa’!)
Step 6
As the broth comes to a rapid boil, add the ramen seasoning packet and the noodles. Cook according to the package instructions, ensuring the noodles don’t become overcooked.
Step 7
When the noodles are nearly cooked, stir in 1 tablespoon of peanut butter. Whisk it into the broth until it’s fully incorporated, adding a wonderfully creamy and nutty flavor. You’ll start to smell the delightful aroma of peanut butter. Cook for just another 30 seconds to a minute, then immediately turn off the heat and serve. Overcooking might alter the peanut butter’s taste.
Step 8
Transfer the finished ‘Ttang-ppa-myeon’ to a serving bowl. Behold your special ramen, boasting a rich, nutty aroma and a deliciously creamy broth! Enjoy your unique culinary creation.
