Introducing a recipe for delicious and nutty braised peanuts, made with fresh peanuts harvested from our own garden. This savory and sweet side dish is so addictive it’ll make you finish a bowl of rice in no time!
Main Ingredients- 1kg shelled raw peanuts
Braised Peanut Seasoning Sauce- 1 cup soy sauce (200ml)
- 3 cups water (600ml)
- 1/2 cup corn syrup (100ml)
- 1 Tbsp sugar (15g)
- A pinch of toasted sesame seeds (for garnish)

Cooking Instructions
Step 1
First, let me introduce the fresh peanuts that were directly harvested from our garden. The shells are plump, but due to a continuous drought, many of the nuts inside are not fully developed. The peanuts covered in soil were thoroughly dried in the sun. Then, whenever I had spare time, I would gradually shell them, revealing the crispy inner kernels.
Step 2
Now, to start making the braised peanuts, prepare the shelled raw peanuts.
Step 3
Place the prepared raw peanuts in a wide, shallow pan or pot. Add enough water to cover the peanuts completely. Bring it to a boil over medium-high heat, then reduce to medium heat and simmer for about 5 minutes. This step helps to remove any astringency and creates a softer texture.
Step 4
Drain the boiled peanuts in a colander and rinse them lightly under cold running water. Make sure to remove excess water. Thoroughly draining the peanuts will help the seasoning to penetrate better and result in a more delicious braised dish.
Step 5
Return the drained peanuts to the wide, shallow pan or pot. Add the soy sauce, water, and sugar. It’s important to get the ratio of soy sauce to water right at this stage.

Bring the mixture to a boil over medium heat, then let it simmer until the sauce thickens and reduces, allowing the peanuts to absorb the savory soy sauce flavor. Once the sauce has reduced and the peanuts are well-coated, lower the heat to low. Add the corn syrup and stir gently and evenly to coat the peanuts with a glossy finish. Be careful not to burn them at this stage.

Finally, sprinkle a generous amount of toasted sesame seeds for added nuttiness. Your glossy and appetizing braised peanuts are now ready!
