  • 1 handful Onion (approx. 1/4 medium)
  • Small amount Carrot (approx. 1/8 medium)
  • 1 Tbsp Minced Garlic
  • Small amount Scallion (approx. 1/4 stalk)

Seasoning (using tablespoon as standard)

  • 1 Tbsp Soy Sauce
  • 1/2 tsp Salt
  • 1 tsp Oligosaccharide (or corn syrup/honey)
  • 1.5 Tbsp Ground Perilla Seeds
  • 1 Tbsp Perilla Oil
  • 1 Tbsp Cooking Oil
  • Pinch of Black Pepper
  • Pinch of Sesame Seeds

Cooking Instructions

Gently wipe the mushrooms with a damp paper towel to clean them, or give them a quick rinse. Tear them into bite-sized pieces by hand. Thinly slice the carrot and onion. Slice the scallion diagonally. Mince the garlic finely; pressing it with the flat side of your knife before mincing can help release more flavor.

Bring a pot of water to a boil and add about 1/2 teaspoon of salt. Blanch the prepared mushrooms for 30 seconds to 1 minute. This quick blanching will make the mushrooms chewier and remove any raw taste.

Drain the blanched mushrooms using a colander and immediately rinse them under cold running water to stop the cooking process. Gently squeeze out excess water – you don’t want them completely dry, as a little moisture helps with seasoning absorption and keeps them tender.

If the stir-fry seems too dry, add 1-2 tablespoons of water to adjust the consistency.
