Elevate your everyday mushroom stir-fry with the rich, nutty flavor of perilla seeds! This recipe creates a sophisticated and incredibly savory side dish that’s perfect for any meal.
Main Ingredients- 300g King Oyster Mushrooms (or similar)
- 1 handful Onion (approx. 1/4 medium)
- Small amount Carrot (approx. 1/8 medium)
- 1 Tbsp Minced Garlic
- Small amount Scallion (approx. 1/4 stalk)
Seasoning (using tablespoon as standard)- 1 Tbsp Soy Sauce
- 1/2 tsp Salt
- 1 tsp Oligosaccharide (or corn syrup/honey)
- 1.5 Tbsp Ground Perilla Seeds
- 1 Tbsp Perilla Oil
- 1 Tbsp Cooking Oil
- Pinch of Black Pepper
- Pinch of Sesame Seeds
- 1 Tbsp Soy Sauce
- 1/2 tsp Salt
- 1 tsp Oligosaccharide (or corn syrup/honey)
- 1.5 Tbsp Ground Perilla Seeds
- 1 Tbsp Perilla Oil
- 1 Tbsp Cooking Oil
- Pinch of Black Pepper
- Pinch of Sesame Seeds
Cooking Instructions
Step 1
Gently wipe the mushrooms with a damp paper towel to clean them, or give them a quick rinse. Tear them into bite-sized pieces by hand. Thinly slice the carrot and onion. Slice the scallion diagonally. Mince the garlic finely; pressing it with the flat side of your knife before mincing can help release more flavor.
Step 2
Bring a pot of water to a boil and add about 1/2 teaspoon of salt. Blanch the prepared mushrooms for 30 seconds to 1 minute. This quick blanching will make the mushrooms chewier and remove any raw taste.
Step 3
Drain the blanched mushrooms using a colander and immediately rinse them under cold running water to stop the cooking process. Gently squeeze out excess water – you don’t want them completely dry, as a little moisture helps with seasoning absorption and keeps them tender.
Step 4
Heat a frying pan over medium heat and add a mixture of perilla oil and cooking oil. Add the minced garlic and sauté over low heat until fragrant. Be careful not to burn the garlic; you want to infuse the oil with its aroma.

Once the garlic is fragrant, add the prepared king oyster mushrooms and sliced onion to the pan. Stir-fry over medium heat until the mushrooms soften slightly and the onions turn translucent.
Step 6
Add the julienned carrots and continue to stir-fry for about 1 minute. Then, add 1 tablespoon of soy sauce, 1/2 teaspoon of salt, a pinch of black pepper, and 1 teaspoon of oligosaccharide. Stir well to ensure the seasonings are evenly distributed. Cook until the carrots are tender-crisp for the best texture.
Step 7
Add the diagonally sliced scallions and stir-fry for another minute to add their fresh flavor. Reduce the heat to low. Stir in 1.5 tablespoons of ground perilla seeds, 1/2 tablespoon of perilla oil, and a pinch of sesame seeds. Stir quickly to combine, as overcooking perilla seeds can make them bitter. If the stir-fry seems too dry, add 1-2 tablespoons of water to adjust the consistency.
Step 8
Transfer the finished mushroom stir-fry to a serving plate. Garnish for a beautiful presentation!
