Main Ingredients- 1.5 cups soaked rice (standard paper cup measure)

Cooking Instructions
Step 1
First, rinse the rice thoroughly and soak it in water for about 30 minutes. 1.5 cups of soaked rice will be a generous portion for a family of four. (Note: 1 standard paper cup of dry rice, when soaked, yields approximately 1.5 cups.)
Step 2
Prepare 1 cup of cleanly processed pine nuts. To make them easier to grind, lightly toast the pine nuts in the microwave for about 1 to 1.5 minutes. This helps to dry them out, making them crumbly. Keep an eye on them to prevent burning.
Step 3
In a blender, combine 1 cup of pine nuts and 1 cup of water. Blend until very smooth. A 1:1 ratio of pine nuts to water is ideal for achieving the smoothest consistency. Transfer the blended pine nuts to a large bowl. If there are any pine nut residues left in the blender, don’t waste them! Add another 2 cups of water to the blender and blend again, swirling and scraping the sides to collect all the remaining pine nut goodness. This process uses a total of 3 cups of water for grinding the pine nuts.
Step 4
Next, add 1.5 cups of the soaked rice and 1.5 cups of water to the blender. Blend these ingredients together. If you prefer a slightly coarser texture with some rice grain bite, you can adjust the blending time. Grind the rice to your desired consistency.
Step 5
Transfer the blended rice mixture to a pot. To rinse out any remaining rice particles from the blender, add about 3.5 cups of water in stages, swirling and pouring the water into the pot each time. This ensures no rice goodness is left behind.
Step 6
Place the pot containing the rice mixture over medium heat and begin to cook. It’s crucial to stir continuously with a wooden spoon to prevent the porridge from sticking to the bottom of the pot. Keep stirring until the rice is fully cooked and the mixture becomes thick and porridge-like.
Step 7
Once the rice has cooked to a thick, paste-like consistency, pour in the blended pine nut liquid. Stir well to combine the pine nut liquid with the rice paste. Continue to simmer gently, stirring occasionally to prevent sticking. After adding the pine nuts, reduce stirring to only when necessary to avoid breaking down the nuts too much. Using a wooden spoon is recommended as it’s gentle on the pot and ensures smooth stirring.
Step 8
Finally, season the porridge with salt to taste. If you plan to eat it immediately, add the salt now. If you intend to store it and eat it later, it’s best to season just before serving.
