Nutty Perilla Seed Radish Side Dish

We’ve made a delicious radish side dish using perilla seeds, which double the nutty flavor and create a wonderfully creamy texture. This dish is incredibly satisfying and a perfect accompaniment to a bowl of warm rice.

Ingredients

  • 1/2 Korean radish (approx. 300-400g), or slightly more
  • 3 Tbsp perilla seed powder
  • 1 Tbsp sesame oil
  • 1 Tbsp minced garlic
  • 0.5 Tbsp minced green onion (or finely chopped green onion)
  • 100ml water
  • 0.5 Tbsp salt (for salting the radish; adjust seasoning at the end)

Cooking Instructions

Step 1

First, wash and peel the Korean radish. Slice it into thin strips about 0.3cm thick. Avoid slicing them too thinly, as they might break apart easily. Place the sliced radish in a bowl, add half a tablespoon of salt, and let it sit for about 10 minutes to wilt. This process draws out excess moisture, making the radish more tender and ready to absorb flavors.

While the radish is salting, heat 1 tablespoon of sesame oil and 1 tablespoon of minced garlic in a small pan over low heat. Gently sauté until the garlic becomes fragrant, being careful not to burn it. This step is crucial for infusing the dish with a wonderful aromatic base.

After 10 minutes, lightly squeeze the salted radish with your hands to remove excess water. Reserve about half of the liquid that came out of the radish. Add the sautéed garlic and sesame oil to the pan. Toss in the squeezed radish and about half of the reserved radish liquid. Stir briefly to combine everything with the garlic and sesame oil. Then, cover the pan and cook over low heat for 5 minutes, or until the radish becomes translucent and tender.

In a separate small bowl, combine 3 tablespoons of perilla seed powder with 100ml of water. Whisk thoroughly until there are no lumps, creating a smooth, slightly thick liquid – this is your perilla seed sauce.

Once the radish is tender, pour the prepared perilla seed sauce into the pan with the radish. Add the minced green onion (or chopped green onion). Gently stir everything together using a spatula or chopsticks, and cook for another 1-2 minutes until the perilla sauce is well incorporated and coats the radish.

Taste the dish and adjust the seasoning with a little more salt if needed. Once all the ingredients are well combined and the dish has a glossy finish, your delicious perilla seed radish side dish is ready! It’s wonderful served over a bowl of hot rice.
