Cookie Dough Ingredients- 75g unsalted butter, at room temperature
- 60g brown sugar (white sugar can be substituted if brown sugar is unavailable)
- 1/2 large egg, at room temperature
- 130g cake flour, sifted
- Pinch of salt
- 90g walnuts, roughly chopped

Step 1
Begin by creaming the softened butter. In a mixing bowl, beat the room-temperature butter with a whisk until smooth and creamy. Gradually add the brown sugar (or white sugar) in 2-3 additions, mixing well after each addition until the sugar is fully incorporated and the mixture is light and fluffy. Ensure no sugar granules remain visible.

Next, add the beaten egg (at room temperature) gradually in 2-3 additions. Mix thoroughly after each addition, ensuring the mixture doesn’t curdle or separate. Whisk until well combined and smooth, resembling an emulsion. This gradual addition helps create a stable dough.

Sift the cake flour twice for a lighter texture. Add the sifted cake flour and a pinch of salt to the butter-sugar-egg mixture.
