Basic Ingredients

  • 100g Seaweed (mucosiformis algae, pre-cleaned)
  • 1 pack Soft Tofu (300-350g)
  • 600ml Water (3 cups)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Rice Wine (or cooking wine, for removing gamey odors)
  • 2 Tbsp Fish Sauce (or soy sauce)
  • 1/2 Tbsp Soy Sauce (for seasoning adjustment)
  • 1 Tbsp Sesame Oil (for sautéing)

Cooking Instructions

Step 1

First, rinse the seaweed thoroughly under running water to remove any dirt or debris. Drain well in a colander. Be careful not to rinse for too long, as this can diminish the flavor. Rinse gently.

Heat 1 Tbsp of sesame oil in a pot over low heat. Add 1 Tbsp of minced garlic and 1 Tbsp of rice wine, and sauté until fragrant. Be careful not to burn the garlic. Briefly sauté the seaweed with the drained water for about 1-2 minutes. Overcooking can make it tough, so a short sauté is key.

Pour 600ml (3 cups) of water into the pot with the sautéed seaweed. Add 2 Tbsp of fish sauce and 1/2 Tbsp of soy sauce. You can adjust the soy sauce to your taste. Bring to a boil over high heat.

Once the broth boils, gently break the 1 pack of soft tofu into large pieces with a spoon and add it to the pot. Be careful not to break the tofu too much. After adding the tofu, bring it back to a boil, then reduce the heat to very low and simmer for another 2-3 minutes. Simmer until the tofu is heated through and the flavors meld.

It’s best not to eat the Seaweed and Tofu Stew immediately. After turning off the heat, cover the pot and let it sit for 1-2 minutes. This allows the broth to deepen and the flavors to meld, making it even more delicious.
