Ocean’s Delight: Refreshing Oyster and Seaweed Soup
A Bracing Seaweed Soup with Fresh Oysters – No Meat Required!
We’ve made a wonderfully refreshing seaweed soup featuring fresh oysters. It’s light, flavorful, and perfect for any meal!
Ingredients- 200g fresh oysters
- 20g dried, cut seaweed
- 2 tsp sesame oil
- 1 tsp minced garlic
- 1 tbsp soy sauce for soup (guk-ganjang)
- 500ml water (approx. 2.5 cups)
Cooking Instructions
Step 1
First, soak the 20g of dried, cut seaweed in cold water for about 15-20 minutes until it’s fully rehydrated and softened. Once plump, gently squeeze out excess water and set aside.
Step 2
Carefully rinse the 200g of fresh oysters under cold running water multiple times. Ensure all grit and any shell fragments are removed for a clean taste. Drain them lightly on a sieve.
Step 3
In a pot, heat 2 tsp of sesame oil over medium-low heat. Add the squeezed seaweed and stir-fry for 2-3 minutes until it becomes tender and fragrant, absorbing the nutty aroma of the sesame oil.
Step 4
Pour in 500ml of water and bring it to a boil over high heat. Once boiling, reduce the heat to medium and let it simmer for about 5 minutes, allowing the seaweed to soften further and release its flavor.
Step 5
While the soup is simmering, add 1 tsp of minced garlic and 1 tbsp of soy sauce for soup (guk-ganjang) to season. This soy sauce adds a deep umami flavor. Taste and adjust the seasoning as needed.
Step 6
Finally, add the rinsed fresh oysters to the pot. Cook for just 1-2 minutes. Oysters can become tough if overcooked, so aim to cook them just until they turn opaque and are heated through. Turn off the heat immediately to preserve their delicate texture. For an extra touch, you can add finely chopped chili peppers for a hint of spice and color.
