Fried Rice Ingredients- 1 bowl cooked rice (warm)
- 1/4 carrot (finely diced)
- 1/2 onion (finely diced)
- 1/2 green onion (finely diced)
- 3 eggs
- 2 slices processed cheese
- 1 Tbsp tomato ketchup
- 2 Tbsp cooking oil
Salad Ingredients- 1/2 cucumber (thinly julienned)
- 2 imitation crab sticks (shredded or chopped)
- 1 Tbsp mayonnaise
- Pinch of salt

Cooking Instructions
Step 1
First, prepare the vegetables for the fried rice. Wash and peel the carrot, then finely dice it. Finely dice the onion and green onion similarly.

Heat cooking oil (2 Tbsp) in a lightly oiled pan over medium-low heat. Add the diced carrots and stir-fry for about 1 minute until fragrant. The carrots should start to look slightly translucent.

Once the carrots are halfway cooked, add the diced onion and continue to stir-fry for about 2 minutes until the onion becomes translucent and sweet. Be careful not to burn the onions by using excessive heat.

When the onions are sufficiently cooked, add the diced green onion and stir-fry for about 30 seconds, just until its aroma is released. Overcooking green onions can make them bitter.

Add the warm cooked rice (1 bowl) and tomato ketchup (1 Tbsp) to the sautéed vegetables. Gently mix using a spatula, being careful not to mash the rice grains. Stir-fry for 1-2 minutes until the ketchup evenly coats the rice. Transfer the fried rice to a separate bowl and set aside.

Now, let’s prepare the salad. Wash the cucumber and julienne it thinly. Place the julienned cucumber in a bowl, sprinkle with a pinch of salt, and let it sit for about 10 minutes. This process draws out excess moisture, ensuring a crisp texture.

Squeeze out as much water as possible from the salted cucumber. In the same bowl, add the shredded imitation crab sticks and mayonnaise (1 Tbsp). Gently mix everything together until well combined.

Lightly grease a flat pan with oil and pour in the beaten eggs (3 eggs) over low heat. Spread the egg mixture thinly to create a crepe-like omelet. Cook until set and no longer runny, being careful not to burn it. Carefully slide the cooked omelet onto a plate.

On top of the warm omelet, place the 2 slices of processed cheese. The cheese will help bind the omurice and add a creamy, savory element.

Spoon the prepared fried rice onto the cheese. Starting from one end, carefully and tightly roll up the omelet, cheese, and rice together. Apply gentle pressure to ensure a compact roll that won’t fall apart.

You can use a bamboo mat or plastic wrap to help shape and tighten the roll further. Once shaped, slice the omurice roll into bite-sized pieces, about 2-3 cm thick, for attractive presentation. Lightly wetting your knife with water will help you slice cleanly.
