Cooking Instructions
Step 1
Let’s start by preparing the vegetables for our Japchae. This recipe uses bell peppers, oyster mushrooms, and chives, but feel free to add onions or carrots for extra flavor and texture. Shiitake or enoki mushrooms are also great substitutes. Prepare your veggies as you like!

The star of Japchae is the glass noodles. Make sure to soak them in water for at least 1 hour before you start cooking. Soaking them thoroughly is key to achieving a perfectly chewy texture. If you have more time, soaking for 2 hours will yield even better results.

Gently rinse the oyster mushrooms under running water to remove any dirt. Trim off the tough end of the stems. If the mushrooms are large, tear them into bite-sized pieces.

Wash the colorful bell peppers, remove the seeds, and slice them into thin strips. Slicing them thinly helps them cook evenly without breaking apart, preserving a pleasant crispness.

Rinse the chives by gently rubbing them under running water, then swish the leafy parts lightly. Shake off excess water and cut them into 6-7 cm lengths. Make sure they are well-drained before adding to the pan.

Now, let’s start stir-frying! Lightly oil a wide pan and add the oyster mushrooms. Sprinkle a pinch of salt. Stir-fry until the mushrooms release their moisture and become tender. This process helps them cook down nicely.

Once the mushrooms are tender, add the sliced bell peppers and stir-fry them briefly. It’s important to cook them just enough to retain their vibrant color and a slight crunch. Next, add the minced garlic (0.5 Tbsp) and sauté until fragrant.

It’s time to add the glass noodles. This step takes about 2-3 minutes. Reduce the heat to medium-low, add the pre-soaked glass noodles to the pan, and pour in 100ml of water. Stir-fry for a short while, allowing the noodles to absorb some of the liquid.

As the noodles begin to soften and the liquid reduces slightly, add the soy sauce (3 Tbsp) and sugar (0.5 Tbsp). Stir well and continue to cook, ensuring the noodles are evenly coated with the seasoning. This is where the magic happens!

Just before turning off the heat, drizzle in the sesame oil (2 Tbsp) and give it a quick mix. Immediately turn off the heat, then add the cut chives. Gently toss everything together using the residual heat of the pan to cook the chives slightly. Be careful not to overcook them, as they can become too soft.
