One-Pan Jokbal Rice Bowl: A Delicious Way to Use Leftover Jokbal
Transform Leftover Jokbal into a Quick and Easy Rice Bowl!
Sunday brunch or lunch dilemma? Instead of instant noodles, I remembered the leftover jokbal in the fridge and decided to make a simple jokbal rice bowl! This recipe is perfect for a quick and satisfying meal, especially when you have cooked jokbal (Korean braised pig’s trotters) leftover from a previous meal. It’s a ‘one-pan’ wonder that minimizes cleanup and maximizes flavor.
Ingredients- Jokbal (cut into bite-sized pieces)
- Cooked Rice (warm)
- Fresh Perilla Leaves (깻잎)
- Onion (sliced thinly)
- Water 200ml (for sauce)
- Sugar 2 Tbsp (or corn syrup/oligo-syrup)
- Soy Sauce 2 Tbsp
Cooking Instructions
Step 1
Lightly oil a frying pan and sauté the bite-sized jokbal pieces along with the thinly sliced onion until they turn golden brown. While a broiler or air fryer could be used, we’re embracing the convenience of a ‘one-pan’ method here! Meanwhile, prepare the sauce: In a separate bowl, combine 200ml of water (you can use slightly less if you prefer a thicker sauce), 2 Tbsp of sugar (or your preferred sweetener like oligo-syrup if you don’t have sugar), and 2 Tbsp of soy sauce. Mix well until the sugar is dissolved. Once the jokbal and onions are nicely browned, pour the prepared sauce into the pan.
Step 2
Allow the sauce to simmer and reduce with the jokbal and onions for about 7 minutes over medium-low heat. The sauce should thicken and coat the jokbal beautifully, infusing it with flavor.
Step 3
Once the sauce has reduced and everything is well combined, spoon the delicious jokbal mixture over a bowl of warm, cooked rice. The glossy sauce will make the rice incredibly appetizing.
Step 4
For a fresh finish, thinly slice some perilla leaves and scatter them over the top of the jokbal rice bowl. The refreshing aroma of the perilla leaves complements the rich flavor of the jokbal.
