Main Ingredients- 400g fresh duck meat
- 1 onion (sliced)
- 6 perilla leaves (cut into quarters)
- 1/2 stalk green onion (sliced diagonally)
- 1 Korean green chili pepper (optional, sliced diagonally)
Seasoning Sauce- 1.5 Tbsp gochujang (Korean chili paste)
- 0.5 Tbsp sugar
- 1 Tbsp oligodang (corn syrup)
- 1.5 Tbsp soy sauce
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 0.5 Tbsp sesame oil
- 1 Tbsp mirin (optional, for marinating)
- Pinch of salt
- Pinch of black pepper
- A little toasted sesame seeds
- 1.5 Tbsp gochujang (Korean chili paste)
- 0.5 Tbsp sugar
- 1 Tbsp oligodang (corn syrup)
- 1.5 Tbsp soy sauce
- 2 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 0.5 Tbsp sesame oil
- 1 Tbsp mirin (optional, for marinating)
- Pinch of salt
- Pinch of black pepper
- A little toasted sesame seeds
Cooking Instructions
Step 1
Lightly rinse the fresh duck meat under running water and pat it dry. Place the duck meat in a bowl, add 1 Tbsp of mirin, a pinch of salt, and a pinch of black pepper. Mix well by hand, like kneading, and let it marinate for about 10 minutes. This helps to remove any gamey odor from the duck and tenderize the meat.
Step 2
Now, let’s make the delicious seasoning sauce. In a small bowl, combine 1.5 Tbsp gochujang, 0.5 Tbsp sugar, 1 Tbsp oligodang, 1.5 Tbsp soy sauce, 2 Tbsp gochugaru, 1 Tbsp minced garlic, and 0.5 Tbsp sesame oil. Mix them thoroughly. Pour the prepared sauce over the marinated duck meat and mix well with your hands. Marinating it in the refrigerator for about 20 minutes will allow the flavors to meld even deeper.
Step 3
Heat a pan and add the marinated duck meat. Stir-fry over medium heat. As the duck releases its fat and begins to cook, add the sliced onion, diagonally sliced green onion, and the optional Korean green chili pepper. Continue to stir-fry until the onion becomes translucent and the duck meat is golden brown. Be careful not to cook over high heat as it might burn; maintaining medium heat is key. Finally, sprinkle some toasted sesame seeds on top for a mouth-watering Ori-Jumeok. It’s a perfect dish to serve with rice or as a snack with drinks!
