Pasta Ingredients- Spaghetti noodles, for 2 servings
- Shrimp, about 10 pieces
- 1/2 onion
- 5 mushrooms
- 1 Tbsp ketchup
- A pinch of crushed red pepper (adjust for spice level)
- Parsley flakes (for garnish)
- Grana Padano cheese (or Parmesan cheese, for garnish)
- Olive oil
- 1 Tbsp minced garlic
- Salt (for boiling pasta)
- Black pepper (for sautéing shrimp)
Creamy Tuompa Sauce- 250ml heavy cream
- 1 tsp paprika powder (or mild chili powder)
- A pinch of black pepper
- 1 Tbsp soy sauce
- A pinch of coriander powder (or dried herb mix)
- 1/2 Tbsp garlic powder
- 1 Tbsp chopped green onion (for garnish and added flavor)
- 250ml heavy cream
- 1 tsp paprika powder (or mild chili powder)
- A pinch of black pepper
- 1 Tbsp soy sauce
- A pinch of coriander powder (or dried herb mix)
- 1/2 Tbsp garlic powder
- 1 Tbsp chopped green onion (for garnish and added flavor)
Cooking Instructions
Step 1
First, let’s prepare the sauce ingredients. In a bowl, combine 250ml of heavy cream, 1 tsp of paprika powder (or mild chili powder), a pinch of black pepper, 1 Tbsp of soy sauce, a pinch of coriander powder (or dried herbs), and 1/2 Tbsp of garlic powder. Whisk everything together until well combined. Separately, mix half a teaspoon of chicken stock with 100ml of water to create a broth. This broth will be used later to adjust the sauce’s consistency.
Step 2
Bring a large pot of water to a rolling boil. Add 1 Tbsp of salt and 1 Tbsp of olive oil to the boiling water. Then, add the spaghetti noodles for 2 servings and cook for approximately 9 minutes, or until they reach the ‘al dente’ stage (slightly firm to the bite). Be careful not to overcook the pasta.
Step 3
Prepare the shrimp by peeling them. Using a toothpick, gently devein the shrimp by inserting it into the second segment from the head and pulling out the dark intestinal tract. This step ensures a cleaner taste.
Step 4
Remove the heads from the prepared shrimp. (You can use the shrimp heads to make a flavorful stock, but we’ll skip that for this recipe.)
Step 5
In a small pot, bring water to a boil and briefly blanch the shrimp. Cook them only until they turn pink. Overcooking can make the shrimp tough.
Step 6
Prepare the vegetables: thinly slice the mushrooms, mince the garlic into thin slices, and finely dice the onion into approximately 0.5cm pieces. Having your vegetables prepped will make the cooking process much smoother.
Step 7
Heat a tablespoon of butter (or olive oil) in a pan over medium heat. Add the prepared shrimp and a sprinkle of black pepper. Sauté until the shrimp are almost cooked through. Then, add 1 Tbsp of ketchup and stir-fry for another minute. Cooking the shrimp separately helps maintain their tender texture and the ketchup’s sweet flavor.
Step 8
In a separate pan, heat a generous amount of olive oil over medium heat. Add the minced garlic and sauté until fragrant, then add the diced onions and cook until they become translucent. Next, add the sliced mushrooms and sauté with the onions. Once the vegetables are softened, pour in the prepared sauce and bring it to a gentle simmer over medium-low heat. Add the prepared broth little by little to reach your desired sauce consistency.
Step 9
When the sauce has thickened to your liking, add the drained al dente pasta to the pan. Toss everything together and let it simmer for about 2 more minutes, allowing the pasta to absorb the sauce. Finally, add the separately sautéed shrimp and gently mix them in. Serve the pasta onto plates, generously grate Grana Padano cheese (or Parmesan) over the top, and finish with a sprinkle of parsley flakes. Your delicious homemade Tuompa Pasta is ready to enjoy!
