Cooking Instructions
Step 1
Start by soaking the pork ribs in cold water for about 30 minutes to an hour to remove any excess blood. This step is crucial for a cleaner taste and appearance. Once the blood is mostly out, carefully remove the thin membrane (silverskin) from the bone side of the ribs using your fingers or a knife. Removing this membrane ensures the meat becomes tender and easily separates from the bone after cooking.
Step 2
Rinse the ribs lightly under running water. Place the ribs in a pot and cover them with water. Add the whole black peppercorns, bay leaves, and the stalk of green onion to the pot. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 40 minutes until the ribs are tender. While the ribs are boiling, let’s prepare the delicious BBQ sauce.
Step 3
In a bowl, combine all the BBQ sauce ingredients: steak sauce, minced garlic, oyster sauce, ketchup, cooking wine (mirin), honey, and a pinch of black pepper. Whisk everything together until well combined. You’ll have a sweet and savory barbecue sauce ready for the ribs.
Step 4
Carefully remove the boiled ribs from the pot and rinse them again under cold water. This helps remove any remaining blood or bone fragments from the boiling process, ensuring a cleaner final product. Drain the ribs thoroughly in a colander. It’s important they are well-drained so the sauce adheres properly.
Step 5
Place the drained ribs into a large resealable bag or a container. Pour all of the prepared BBQ sauce over the ribs.
Step 6
Seal the bag or cover the container and gently massage the ribs to ensure they are evenly coated with the sauce. Let the ribs marinate in the refrigerator overnight for the best flavor. If you’re short on time, marinate for at least 1 hour. The longer they marinate, the deeper the flavor will penetrate the meat.
Step 7
The next day, it’s time to bake the marinated ribs. Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper and arrange the marinated ribs on it. Reserve about half of the remaining sauce to brush onto the ribs during cooking for extra glaze and flavor. Apply the remaining sauce to the top side of the ribs for now.
Step 8
Place the ribs in the preheated oven and bake for 20 minutes. They should start to turn golden brown.

After 20 minutes, carefully remove the tray from the oven. Flip the ribs over. Brush the other side of the ribs with the reserved sauce. Return the tray to the oven and bake for another 15 minutes, or until the ribs are fully cooked and caramelized.

While the ribs are finishing their bake, you can add your optional garnishes to the tray. I added some sliced onion, colorful mini bell peppers, and French fries. Brushing a little oil on the vegetables will help them roast nicely alongside the ribs.
