  • 180g firm tofu (for pan-frying)
  • 1/2 medium onion
  • 20g red cabbage
  • 2 king oyster mushrooms
  • 1/2 green onion (white part mostly)
  • 1 large egg

First, it’s crucial to remove as much moisture from the tofu as possible. Wrap the tofu in a clean kitchen towel or cheesecloth and press firmly with your hands to squeeze out the excess water. This step ensures the patties hold their shape and aren’t too mushy.

Next, let’s prepare the vegetables and mushrooms that will add great texture and flavor. Finely mince the onion, red cabbage, king oyster mushrooms, and green onion. The finer the dice, the better the ingredients will incorporate into the patty mixture and the easier they’ll be to eat.

In a large bowl, combine the well-drained tofu and the drained tuna. Add all the finely minced vegetables and mushrooms. Season with 1/3 tsp of salt and a pinch of black pepper. Mix everything together by hand, kneading gently until well combined and it forms a cohesive mixture. Once the mixture is ready, take portions of it and shape them into small, flattened discs, about the size of a bite. Aim for a moderate thickness so they cook evenly through.

Lightly coat each shaped patty with pancake mix or all-purpose flour. This helps the egg wash adhere better and contributes to a slightly crispier exterior when baked. In a separate bowl, whisk the egg until well combined. Then, dip each floured patty into the beaten egg, ensuring it’s fully coated.

Now, let’s prepare for baking. Line a baking sheet with parchment paper or a silicone baking mat. Lightly grease the surface with cooking oil using a spray bottle, or brush on oil with a pastry brush or a paper towel dipped in oil. This prevents the patties from sticking. Arrange the egg-coated patties on the prepared baking sheet, leaving some space between them. Bake in a preheated oven at 180°C (350°F) for 10 minutes. After 10 minutes, carefully remove the baking sheet, flip each patty, and return them to the oven to bake for another 5-10 minutes, or until golden brown on both sides.
