I bought a pack of chicken drumsticks on sale at the supermarket and decided to make a roasted chicken dish in the style of Goobne Chicken, using the recipe from Eonamsoeng (Ryu Soo-young). This recipe is perfect for recreating that delicious, crispy-skinned, juicy chicken at home using just a frying pan.

  • 1 pack Chicken drumsticks (approx. 500g)
  • 1 stalk Green onion
  • 1/2 Onion
  • 2 Korean chili peppers (Cheongyang)
  • 2 Red chili peppers

  • 2 pinches Salt
  • A pinch of Black pepper

Cooking Instructions

First, rinse the chicken drumsticks under running water and pat them thoroughly dry with paper towels. Ensuring the chicken is dry is crucial for achieving crispy skin.

Prepare the vegetables: roughly chop or slice the onion, cut the green onion into 5cm (about 2-inch) segments, and slice the Korean and red chili peppers diagonally. Feel free to adjust the amount of Cheongyang chili peppers or add more if you prefer it spicier.

Heat a non-stick frying pan over medium heat without adding any oil. Place the chicken drumsticks skin-side down. Cook for about 5-7 minutes until the skin turns golden brown and crispy. Once the skin starts to brown, season with 2 pinches of salt and a pinch of black pepper.

Once the chicken skin is a nice golden brown, flip the drumsticks over to cook the meat side. Continue to cook for another 3-4 minutes. Keep an eye on the heat to prevent the chicken from burning.
