Ingredients- Oyster innards (from 10 oysters)
- 15 Shrimp
- 3 cups Glutinous rice, soaked

First, prepare the cleaned oyster innards. Heat 1-2 tablespoons of sesame oil in a pan over medium-low heat. Add the oyster innards and stir-fry while breaking them apart with chopsticks for about 2-3 minutes, allowing their rich, nutty aroma to develop.

Once the oyster innards are nicely sautéed, add the pre-soaked glutinous rice. Stir continuously with a spatula for 1-2 minutes, mixing the rice thoroughly with the oyster innards. The rice grains should start to turn translucent, indicating they’re ready for the next step.

Now it’s time to add water and simmer the porridge. Typically, porridge is made with about 7 times the amount of water relative to the ingredients. However, I prefer a slightly thicker, chewier texture, so I only added about 4 times the amount of water. Feel free to adjust the water level according to your preference. Bring the mixture to a boil over high heat, then reduce to medium-low and let it simmer gently until cooked.

While the porridge is simmering, let’s prepare the shrimp. It’s common to remove the head and devein the shrimp, then peel them. If you’re using pre-prepared shrimp, simply trim the tails neatly. The natural sweetness of the shrimp will add wonderful flavor to the porridge.
