Main Ingredients
- 12 racks LA Galbi (short ribs)
- 1/3 carrot
- 1/2 onion
- 1/3 stalk green onion
- 2 Tbsp minced garlic
- 1 tsp grated ginger
- 3 Tbsp oyster sauce
- 2 Tbsp honey (or sugar)
- 2 Tbsp cooking wine (Cheongju)
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
First, after thawing the frozen LA Galbi, begin by removing the blood. Soak the ribs in cold water and change the water 3-4 times to thoroughly remove any blood and impurities. This process takes about 4 hours and helps eliminate any gamey smell while tenderizing the meat. After draining, place the ribs in a colander to remove excess water.
Step 2
Now, it’s time to marinate the LA Galbi beautifully. Mix all the sauce ingredients together to add a deep flavor. The star ingredient is the rich oyster sauce! Add minced garlic, grated ginger, cooking wine (Cheongju), honey (or sugar), and sesame oil to create a delicious marinade. Cut the green onion into large pieces, about 3-4 cm long.
Step 3
Add the marinated LA Galbi to the sauce and mix well by massaging it into the meat. Then, add the roughly chopped carrots, onion, and sprinkle with toasted sesame seeds. After combining all ingredients, cover with a lid and let it marinate in the refrigerator for at least half a day to a full day. This marination allows the flavors to penetrate deeply, making the meat extra tender and delicious. Transfer the marinated galbi to a pot and add just enough water to cover the bottom slightly. Close the lid and simmer gently over medium heat. The meat’s own juices and the natural moisture from the vegetables will combine and gently braise the meat until it’s wonderfully tender. Once the meat is fully cooked and tender, it’s ready.
Step 4
Serve the well-cooked LA Galbi Jjim generously in a serving dish. Finally, sprinkle with chopped green onions for a beautiful garnish. Your incredibly easy LA Galbi Jjim, made with just oyster sauce, is complete! Enjoy your meal!
