  • 1 bunch Chives (approx. 100g)
  • 2 handfuls King Oyster Mushrooms (approx. 100g)
  • 1 Dried Red Chili (or a pinch of dried chili)
  • 0.5 Tbsp Minced Garlic (approx. 7g)

Cooking Instructions

Step 1

First, prepare the ingredients. Lightly rinse the king oyster mushrooms under running water, trim the woody ends, and tear them by hand into bite-sized pieces (about 3-4cm long). Trim any wilted leaves from the chives, wash them thoroughly, and cut them to a similar length as the mushrooms. Finely chop the dried red chili to add a touch of spiciness.

Heat 1-2 tablespoons of cooking oil in a pan over low heat. Add the chopped dried chili and minced garlic. Sauté slowly until the aroma of garlic and chili infuses the oil. Be careful not to burn the garlic.

Once you can smell the fragrant garlic, turn the heat up to high. Add the prepared king oyster mushrooms to the pan and stir-fry quickly. Cooking over high heat helps evaporate the mushrooms’ moisture, keeping them tender and preventing excess water from forming.

After stir-frying the king oyster mushrooms for about 3 minutes, until they have softened and started to turn slightly golden,

Add the chopped chives and 0.5 Tbsp of oyster sauce. Stir-fry briefly to combine everything, then immediately turn off the heat. This residual heat will help keep the chives crisp. Stir in any remaining oyster sauce (to your preference) and mix gently until well combined for a delicious stir-fry. Taste and adjust seasoning with a pinch of salt if needed, and finish with a sprinkle of black pepper as desired.
