Main Ingredients

  • 100g Korean Radish (thinly sliced)
  • 2 leaves Napa Cabbage (thickly shredded)
  • 1 bunch Chives (cut into 4cm lengths)

  • 1 Cheongyang Chili Pepper (diagonally sliced)
  • 1L Anchovy Broth (store-bought or homemade)

  • 1.5 Tbsp Anchovy Sauce (for a refreshing broth)
  • 1 Tbsp Salted Shrimp (for umami)
  • 1 Tbsp Minced Garlic

Cooking Instructions

First, let’s make the broth. Boil 1 liter of water with an anchovy broth pack for about 10 minutes. If you don’t have a broth pack, you can use dried anchovies and kelp.

While the broth is simmering, it’s time to clean the oysters. Dissolve 1 tablespoon of salt in cold water and soak the oysters for about 10 minutes. This helps to remove any impurities. Afterward, gently rinse the oysters under running water a couple of times.

Let’s prepare the vegetables. Thinly slice the Korean radish into bite-sized pieces. Shred the napa cabbage thickly. Cut the chives into 4cm lengths. Diagonally slice the red and Cheongyang chili peppers for a nice presentation. Finally, mince the garlic.
