  • 1 block Tofu (approx. 300g)
  • 1 pack Enoki Mushrooms

Almond Butter Sauce

  • 1 Tbsp Almond Butter
  • 1/2 Tbsp Soy Sauce
  • 1/2 Tbsp Minced Garlic
  • 1 Tbsp Lemon Juice
  • 1/2 Tbsp Apple Cider Vinegar (or regular vinegar)
  • 1 Tbsp Allulose (or corn syrup)

Cooking Instructions

Slice the tofu into approximately 1cm thick pieces. Pat the tofu thoroughly dry with paper towels to remove excess moisture. Lightly season with salt and pepper for enhanced flavor.

Heat a pan over medium-low heat and add a generous amount of cooking oil. Place the seasoned tofu slices in the pan and pan-fry them until golden brown and crispy on both sides. The key is to achieve a crispy exterior and a tender interior.

Trim the base of the enoki mushrooms and rinse them thoroughly, then drain any excess water. In a bowl, combine the enoki mushrooms with 1 Tbsp olive oil, a pinch of salt, and a pinch of pepper, tossing to coat evenly. Place the seasoned enoki mushrooms in an air fryer basket and bake at 180°C (350°F) for 10 minutes until crisp. (Alternatively, bake in an oven at 200°C (400°F) for 8-10 minutes.)
